How about we try these Sugar Cookies with Chocolate Chips that are easy to cut and which maintains the shape flawlessly?

INGREDIENTS
- 225g unsalted butter, softened
- 340g caster sugar
- 1 egg
- 1 teaspoon vanilla
- 1 tsp bicarbonate of soda
- 315g flour
- a handful of dark chocolate chips
Start by creating a cream with the butter and sugar: do this possibly with the help of your standing mixer or a normal mixer for a faster and more efficient result. Once you have created the cream, add the egg, vanilla, and baking soda.
After this step, add the flour little by little and finally the dark chocolate chips. When the flour is mixed with the other ingredients, transfer the dough on a floured surface.
Work the dough to form a solid ball and smooth. If the dough is sticky, add flour and knead again.
We can now cover the dough and let it rest in the fridge for 1-2 hours, this is to prevent the sugar cookies from spreading too much while they are cooking.
After the rest period, move the dough on a floured surface and, using a rolling pin, roll out the dough, leaving it a couple of inches thick. At this point we can finally cut the cookies in the shape that we prefer, and then transfer them on to a baking sheet covered with parchment paper, leaving about 2 inches between each sugar cookie.
Bake in oven at 180Β°C degrees for 8-10 minutes or until the edges are lightly browned.
Let the Sugar Cookies with Chocolate Chips cool down and then decorate them as you prefer, or leave them plain as we did!
