The Upside-Down Plum Cake with White Chocolate is the dream cake, one of the most amazing cakes I think I ever made in my whole life.
The sponge was soft and moist, the white chocolate didn’t make it too sweet and the plums gave it that tiny bit of sour taste that I love.
INGREDIENTS
- 3 eggs
- 90g of caster sugar
- 90g of self raising flour
- 150g of white chocolate shavings
- 4 plums
- Some icing sugar, if you like
Turn on the oven at 190°C, then get the baking dish ready: spread some butter and cover just the bottom with some grease proof paper.
In the standing mixer bowl, beat the eggs and sugar until they get really light and fluffy. Now we can add the sifted flour, folding it in with some quick moves, from bottom to top, with a spoon. Now add the white chocolate shavings and fold them in quickly.
Wash the plums, then remove the pit and slice it finely and place it in a nice way on the baking paper, then pour the cake dough and place it in the oven for 25 minutes.
When the Upside-Down Plum Cake with White Chocolate is finally ready, leave it to cool down in the baking tray for 5 minutes, then move onto a cooling rack but don’t touch the baking paper just yet! When it’s completely cold, remove it and serve.
