Easy Pumpkin Gnocchi Recipe

From start to finish, these pumpkin gnocchi don't take too long – prepped them in the morning ready to be served for lunch. If this is not lush, I don’t know what is.

Gnocchi are a traditional Roman dish introduced by the Roman legions during the empire expansion. The word is said to be derived from nocca (knuckle) or nocchio, which is a knot in the wood. They are a kind of pasta dumplings made traditionally with potato, flour and eggs.

For the gnocchi: roasted pumpkin,  flour & salt For the butter sauce & crispy sage: fresh sage & butter

How do you make pumpkin gnocchi

Roast the pumpkin, mash and mix the rest of the ingredients and let the dough rest.  When done, shape the gnocchi and cook. Get the sauce ready and mix!

Use only fresh ingredients - especially pumpkin and sage.

Can I freeze gnocchi?

Yes! Just let them dry on a cloth with flour, then put them on a tray in the freezer.  When they are more 'solid' transfer to a ziplock bag. When ready to use, don't thaw them, but cook from frozen.
