I am so excited to finally be able to do a collab with my favourite trio of sisters! It’s been crazy cold this winter and it looks like a few more weeks of long nights ahead. One thing that I look forward to after a long and cold day is a cosy, hot meal and I’m sure a lot of us are on the same boat! This easy and foolproof beef stew recipe is a staple in my household and everyone goes for seconds! Easy to say that this doesn’t last very long. Let’s get started!

Beef Stew

The more you get to know me, you’ll know that my most important mission is to create delicious recipes that are almost readily available for anyone to make! The goal is to make these recipes relatable for anyone – especially those who would love to cook but haven’t found a passion for it just yet.

Traditionally, beef stew has a tomato paste or component to it but I usually omit the tomatoes unless I add in some red wine but that’s for a more special braised beef recipe. This one is specifically for a monthly dinner idea.

Beef stew is a hearty meal and by far, the ultimate comfort food! I’ve made this recipe dozens of times in so many different ways. I wanted to make this experience special and do it in my vintage crockpot! You can absolutely do it over the stove or in an instant pot as well. If you’re in a time crunch, 1-2 hours on the stove will suffice.

I roughly chop the veggies as they will get very soft and it’s not as enjoyable when your food is mushy. I like them in bigger chunks but of course, it’s by choice. If you have little ones, smaller chopped veggies may be more favourable. 

Here’s How to Make Easy Beef Stew

Where can I find these ingredients?

All of these ingredients can be found at your local grocery store! There is no special ingredient for this aside from the French onion soup package which takes the flavour of the beef to a whole new level! If you can’t find French onion soup, you can certainly just use a beef stew package and add some onion powder and minced dehydrated onions.

What are the ingredients?

  • Beef Chunks
  • Olive Oil
  • Coarse Ground Pepper 
  • Sweet Onions
  • Garlic Cloves
  • Carrots
  • Celery Stalks
  • Mini Golden Potatoes
  • Beef Bouillon 
  • Water
  • Salt To Taste (optional) 
  • Dark Soy Sauce (optional)
  • Corn Starch/Flour (optional)

I don’t normally add salt as I feel like it’s salty enough with the beef bouillon but again, it’s to taste so add what your heart and stomach desires. Depending on the initial taste test, I’ll add in dark soy sauce for an umami flavour. Corn Starch or flour is needed only if you want to thicken up the sauce.

Can I sub anything out?

You absolutely can! You can make this vegan and use vegetable stock and omit the beef and just make it a veggie stew. Or you can even use meatless ground beef as a protein source. The options are endless and you can totally tailor it to your liking. Make sure to taste as you go and if you’re cooking for the first time or trying to get better, don’t be afraid to keep tasting as you go so you are in full control of what your food is like.

Easy Foolproof Crockpot Beef Stew

Prep Time 10 minutes
Cook Time 4 hours 30 minutes
Total Time 4 hours 40 minutes

Ingredients
  

  • 2 lbs of Beef Chunks cut of your choice, I prefer lean as it gets tender as time passes
  • 2 tbsp of Olive Oil
  • 1 tsp of Coarse Ground Pepper or to taste
  • ¾ of a Medium Sweet Onion roughly chopped
  • 4 cloves of Garlic roughly chopped
  • 2 Large Carrots roughly chopped
  • 4-5 Celery Stalks roughly chopped
  • 10-15 Mini Golden Potatoes chopped in halves
  • 1 Beef Bouillon Cube
  • ½ cup of Water
  • Salt to taste optional
  • Dark Soy Sauce optional for umami flavour and richer colour
  • Corn Starch/Flour only needed if you want the sauce to be thicker

Instructions
 

  • Set your crockpot to high and let it warm up. 
  • Prep all your veggies. Wash, cut and set aside your carrots, celery, onion, potatoes and garlic.
  • Remove beef from package and pat dry/wash clean. 
  • Once your crockpot is warm, add in your olive oil and garlic. I like to stir the garlic around the oil to release more of the garlic fragrance.
  • Add in your beef chunks, pepper, beef bouillon, half cup of water and onion soup package.
  • Stir altogether to make sure everything is coated then add in by layers, onion, carrots, celery and potatoes. DO NOT MIX! Cover it and let it sit for 3 ½ hours.
  • After 3 ½ hours, uncover and stir everything gently together. Make sure to taste and see if you want to add any other seasonings such as the soy sauce, corn starch or salt!
  • Cover for another ½ to 1 hour then serve with fresh cracked pepper and French bread and enjoy!

Notes

Store in smaller portion containers in the fridge and it will stay good for about 3-4 days. Alternatively, if you have a small household like mine, you can store it in the freezer for up to 2 months and reheat on the stovetop on low with ¼ of water and re-add any seasonings you please.

A hack that I found throughout the years is that if you’re not into super soft veggies and you want them to keep their shape a bit, you can fry them in a bit of oil before adding them to the crockpot. 

I usually just pick up my bread from the local bakery but one that I’ve been wanting to try is The Grumpy Olive’s The 3 Minute No-Knead Bread. It looks absolutely delicious and I’m hoping to try this out next month! You’ll definitely want the bread to mop up all the sauce.
