This post about a wonderful Three Layers Chocolate Cake with Sour Cream Frosting has been on the works for way too long: nothing this good and gooey and wonderful should be hidden from the reader.

As a matter of fact, though, I have been so busy with work and many other things in the last couple of months, that I have been ignoring this little space of mine. I had a few moments were I though ‘Why am I still doing this? Is there any point?’ and, even though I still do not have an answer to this, I though I might as well keep on doing it until I figure out something else. Or maybe I am just really fond of this space, for some weird reason, and don’t want to let it go. Or maybe I just want to show people it’s not as they think, I am not going to please anyone but myself.

And this may sound like, coming out of nowhere? I know, yes, it does indeed, but there has been stuff coming up lately that totally screwed me for a second. And I have been resilient on coming here and write anything about it, or everything about it, but you know what? Not only – once again – this is my space, but this is also somewhere I can vent, every now and then, so…why not? I am happy to be where I am right now, I am working on stuff – and this is totally one of them – and I am planning a whole new thing that I can’t still talk about, but it’s coming together and it looks pretty great, so screw you, fake friend, screw you!

Shame on the people who try to push you down simply because you don’t do what they want you to do. Shame on anyone who tries to bring you down because, let’s admit it, they were not ready for you when you walked into their lives. You are not the one to blame, and screw what the others will think!

But now, since you can see I am upset/on the way to mend, let’s just jump into today’s recipe. It was made for one good friend’s birthday and it seemed pretty nice to bring as a present. Am I not the nicest friend ever? Uh?

INGREDIENTS

For the sponges

  • 3 cups of plain flour
  • ¾ cups of cocoa powder
  • 2 tsps of baking powder
  • 1½ tsps of baking soda
  • 1 tsp of salt
  • 1 cup of butter at room temperature
  • 1½ cups of light brown sugar
  • 1½ cups of caster sugar
  • 4 large eggs at room temperature
  • 1 tbs of vanilla extract
  • 2 cups of buttermilk  

For the frosting

  • 455g of dark chocolate, chopped
  • 2 cups of sour cream
  • ¼ cup of light corn syrup*
  • 2 tsps of vanilla extract
  • pinch of salt  

Start by turning on the oven at 180°C and by greasing and flour-ing three 9 inches round baking pans and set them aside.

In a medium bowl, mix together the dry ingredients: flour, cocoa powder, baking powder, baking soda and salt.

In the bowl of your standing mixer beat the butter and sugar together until light and fluffy, then start adding one egg at the time until they are folded in completely. Add the vanilla extract, then half of the dry ingredients and fold in on a low speed. When everything is incorporated, add the buttermilk in a low stream and beat until well combined, then add the rest of the dry mix and let it mix properly.

Divide the batter in equal parts in the 3 baking dishes and bake for 25 minutes, or until cooked through completely. Let them cool down in the dishes for 20 minutes, then move on a cooling rack and let them cool completely before frosting.

For the frosting, chop the chocolate and melt it on a double boiler – or bain marie, as you may prefer – and let it cool.

In a smaller bowl, whisk together the corn syrup, sour cream, vanilla and salt, then add to the melted chocolate and let it cool completely before frosting each layer and the cake.

We used some Maltesers to decorate the Three Layers Chocolate Cake with Sour Cream Frosting and added some chocolate shavings as a last-minute bit.

Notes

The Cake will then be refrigerated until you are ready to dive in!

As a first attempt on a 3-layer-frosted-cake-business, it couldn’t be better. The swearing bit is not included in this post, but in the overall, I can say it’s something I would do again!

*Corn Syrup, an How To: mix a ¾ cup of caster sugar with a 1/4 cup of boiling water and mix well! Nothing easier, right?

  1. The chocolate cake looks so good! And I totally agree with what you said at the beginning there’s no reason that everyone has to be at the same place in life. Just because people think what you’re doing is wrong doesn’t mean it is, because you’re the only one who knows what you’re going through! If you’re planning on taking a break from the blogging world I think that’s completely okay, because sometimes you need to take a step back and reflect on what burnt you out. This was big for me last year because I loved to write but all of a sudden I just didn’t want to, and it’s because I was forcing myself to write about topics I didn’t really care about.   7. OK, I saw the photo then the title with 3 layers of chocolate and I am SOLD! This looks delicious and who doesn’t love a chocolate cake? I bet your friend was so happy when she received this!
    And also, yes I agree with you…remove those toxic people from your life and do what makes you happy. Life is short to be concerned with what others think (as long as you are not actually harming anyone else etc).
