I used to dislike Brussel Sprouts sooooo much, you couldn’t even believe it, then I made this Brussel Sprouts Wreath and everything changed.
Maybe the cheesy middle (definitely the cheesy middle), maybe the chestnut pieces, it all turned around pretty fast and there I was, eating them merrily while dipping fresh bread in the camembert that sat right in the middle.
So then I was like – hold on, this could easily transform into some sort of side dish for Christmas, with some additions here and there! And here we have what I thought looked a lot like a wreath, tasted like comfort and cheese, with the chestnuts to make it very christmas-sy.
If you are ready to dig in this as much as I am, let’s not wait any longer.
Brussel Sprouts Wreath

Making your Christmas table look even more Christmas-sy than before!
Ingredients
- 400g brussel sprouts
- 50g butter
- 80g chestnuts
- 2 tbs maple syrup
- 1 tsp italian herbs
- Salt & Pepper
Baked Camembert
- 1 fresh Camembert
- 1 garlic clove
- 1 sprig of rosemary
- Olive oil to drizzle
Instructions
- Start by washing your Brussel sprouts and chopping 200g of them in half.
- Place on a roasting tray and add the butter, chestnuts and Italian herbs, then the salt and pepper and bake at 170°C for 15 minutes.
- Remove from the oven and drizzle with the maple syrup, make space for the camembert to one side and let it rest while you prep your cheese.
- Remove the camembert from the box and cover it in foil, then place the camembert and score on top, fitting the garlic clove slices in the little spaces from scoring it. Add the sprig of rosemary and place on the oven tray with the sprouts.
- Bake for a further 20-25 minutes, and plate it with the cheese in the centre and the sprouts all around.
- Serve immediately with fresh bread and more rosemary on top.





As mentioned, the recipe for this Brussel Sprouts Wreath combines the Christmas look with one of the most authentic Christmas veggies, traditionally at least here in the UK.
It’s far from becoming everyone’s favourite – cue the kids here – but it’s bound to conquer all the adults who love cheese as much as I do, and I am one of the only ones in this house.
There is absolutely nothing better than a baked Camembert, with the garlic and rosemary, and there is nothing better than fresh bread, particularly admirable if a fresh out-of-the-oven french baguette.
But combine the two together, and you might even be able to add some lovers to the category.
We are now very close to Christmas – just a little more than a week to go! – and we are getting ever so excited for all the food and nice time we will be having, albeit far from home.

This is such an aesthetically pleasing dish and would look great on the table at Christmas! I’m not a HUGE fan of brussel sprouts BUT I haven’t had them in years. I think it’s more of a case of I assume I don’t like them so I don’t have them. But I reckon I could devour this with all the cheese! My mum is a huge fan of sprouts so I might have to bookmark this and see if she fancies giving it a go this Christmas!
I am sure your mum will agree with me – try them again! I used to be flabbergasted with people actually enjoying them until a couple of years ago, then took the plunge and tried them…and actually enjoyed them! They have a bad rep for some reason, but I guess it happens with a lot of veggies!

Wow, a way to save brussel sprouts? Count me in! Because I hate them. But one night, a friend made them and I had to admit that as an adult, I couldn’t summon quite the same passionately negative reaction to them as I had as a child. I probably wouldn’t choose them, but they weren’t terrible, either – and she just added butter, salt and pepper to transform hers. Roast them and add delicious cheese and it would probably be a stop-the-presses moment. I am going to bookmark this page!
