If there’s one vegetable I have always loved since I was a kid, for its milde,r slightly sweet flavour and crunch texture is green cabbage. Maybe it was the slight obsession my dad had to make it with tomato sauce like his mom used to do for him back in Sicily or maybe it was an easy recipe to whip up and nutritios. So my slight obsession with caggabe has never gone away and these delicious air fryer cabbage wedges have only made it bigger!
Imagine you want a quick dinner, but you have in the fridge is. agreen cabbage and you think, oh sad, I will cut it and have it raw in a small bowl or in a salad. Wrong! Think again because this highly nutritious veggie doesn’t have to be boring, and these air fryer cabbage wedges are the clear sign of it!
They are versatile, easy, quick to make, and the ginger sauce can easily be swapped for any seasoning you like most. Cabbage is a leafy vegetable from the Brassica family, which includes broccoli, cauliflowers, radishes and brussels sprouts. Cabbage has been used in a lot of dishes like kimchi, coleslaw and saurekraut thanks to its nutritious benefits. - red cabbage – with its distinctive red purple leaves. Fresh, crisp and slightly peppery and tangy when eaten raw, often used as a side and also braised, sauteed, roasted or steamed;
- bok choi – another Chinese cabbage that is known for its rosette of thick leaves that sprout from a fleshy white stem. Widely used in Asian cuisine for its milder, slightly sweet flavour and crunch in stir fry, steamed and in soups.
What is an air fryer?
An air fryer is a kitchen appliance that cooks by circulating hot air around food and it’s what we will use to make these air fryer cabbage wedges. It works similarly to a convection oven but it’s faster and more efficient.
Thanks to its main components: the heating element, fan and basket, food will be crispy on the outside and tender on the inside, mimicking the texture of deep-fried food but with much less oil.
You can find plenty of health benefits by using it like reduced oil and calories, a reduction of risk of toxic compounds and preserving more nutrients. So not only it’s easy to use, quickens the cooking time and its easy to clean up, it’s also versatile and you can cook about anything in it.

What ingredients do I need to make air fryer cabbage wedges?
To make these delicious air fryer roasted cabbage with ginger sauce, you will need:
- cabbage – the main character of this recipe, becomes tender inside and crispy on the edges;
- extra virgin olive oil – helps the cabbage roast evenly and adds richness;
- yellow onion – adds natural sweetness and depth to the sauce;
- fresh ginger – gives warmth and a subtle spicy kick to the ginger sauce;
- soy sauce – provides saltiness and umami;
- rice vinegar – adds brightness and acidity;
- lemon zest and juice – bring freshness and a citrusy lift to the cabbage;
- brown sugar – balances the salty and tangy flavors with gentle sweetness.

How do I make air fryer cabbage wedges?
This air fryer cabbage recipe is so easy to make! You will start by making the ginger sauce. Add the onion, soy sauce, brown sugar, lemon juice, lemon zest and fresh ginger to a blender. Blend everything until smooth and glossy, and set aside.
Now, cut the green cabbage in half and then cut it into four wedges. Place the cut cabbage in your air fryer basket and brush some olive oil on them. Then, proceed to brush them with half of the ginger sauce, making sure all the wedges are fully coated.
Air fry them for 15-20 minutes (time depends on your air fryer), until the edges are golden and crispy and the middle is tender. Halfway through cooking, brush the rest of the sauce on top of the wedges so it caramelises.
When done, serve hot with some chopped parsley on top and some more sauce on the side. Enjoy your air fryer cabbage wedges!

Air Fryer Cabbage Wedges
Ingredients
For the cabbage
- ½ cabbage
- 15 ml olive oil
For the sauce
- 100 g chopped yellow onion
- 12 g chopped fresh ginger peeled (use more or less depending on strength preference)
- 80 ml soy sauce
- 45 ml rice vinegar
- 1 zest and juice of lemon
- 10 g brown sugar
Garnish
- parsley
Instructions
- Start by making the sauce: add the onion, ginger, soy sauce, rice vinegar, lemon zest and juice, and brown sugar to a blender.
- Blend until completely smooth, glossy, and fragrant. Set aside.
- Now prepare the cabbage: using a sharp knife, cut the cabbage into 4 thick wedges, keeping the core intact so they hold their shape.
- Place the wedges in a single layer in the air fryer basket and drizzle with olive oil and half of the sauce, making sure every edge is lightly coated.
- Air fry at 190°C for 15–20 minutes, until the edges are deeply golden and crisp, while the centre stays soft and tender. *
- Halfway through cooking, brush the rest of the sauce on the wedges, so it caramelises slightly and clings to every layer.
- Serve hot with some chopped parsley and extra sauce on the side if you like.
