Ingredients

For the cabbage

  • ½ cabbage
  • 15 ml olive oil

For the sauce

  • 100 g chopped yellow onion
  • 12 g chopped fresh ginger peeled (use more or less depending on strength preference)
  • 80 ml soy sauce
  • 45 ml rice vinegar
  • 1 zest and juice of lemon
  • 10 g brown sugar

Garnish

  • parsley

Instructions

  • Start by making the sauce: add the onion, ginger, soy sauce, rice vinegar, lemon zest and juice, and brown sugar to a blender.
  • Blend until completely smooth, glossy, and fragrant. Set aside.
  • Now prepare the cabbage: using a sharp knife, cut the cabbage into 4 thick wedges, keeping the core intact so they hold their shape.
  • Place the wedges in a single layer in the air fryer basket and drizzle with olive oil and half of the sauce, making sure every edge is lightly coated.
  • Air fry at 190°C for 15–20 minutes, until the edges are deeply golden and crisp, while the centre stays soft and tender. *
  • Halfway through cooking, brush the rest of the sauce on the wedges, so it caramelises slightly and clings to every layer.
  • Serve hot with some chopped parsley and extra sauce on the side if you like.

Notes

*as a disclaimer, cooking time depends on your air fryer, some take more and some take less so make sure to check on them.
