Ingredients
  

  • 1 double crust dose
  • 400 g mixed berries you can use either frozen mix or make your own mix as well!
  • 100 g light brown sugar
  • 60 g white caster sugar
  • ½ tsp cinnamon
  • ½ tsp cardamom
  • ½ tsp nutmeg
  • 1 orange zest
  • 50 ml Bourbon or to taste
  • 1 tbsp cornflour

Instructions
 

  • Take the first half of the pie crust out of the fridge and place it on a lightly floured surface.
    1 double crust dose
  • Roll it out to about 1/8-inch thickness, ensuring it’s large enough to cover the base and sides of your pie dish.
  • Gently lay the rolled dough into the dish, pressing it into the edges.
  • Trim any excess and place the dish back in the fridge to chill.
  • In a large bowl, combine the mixed berries, cinnamon, cardamom, nutmeg, brown sugar, caster sugar, orange zest, and cornflour.

  • Mix thoroughly until all the ingredients are evenly coated.
  • Pour in the Bourbon and stir well, breaking up any lumps to ensure the mixture is smooth and consistent.
    50 ml Bourbon
  • Let the filling rest for up to 1 hour to allow the flavors to meld.
  • Set your oven to 180°C and allow it to preheat while you finish preparing the pie.
  • Take the second half of the pie crust from the fridge and roll it out on a floured surface.
  • Create your desired decorations or lattice pattern, taking care not to overwork the dough. If it becomes too soft, chill it briefly before continuing.
  • Spoon the berry filling into the prepared pie base, spreading it evenly.
  • Carefully arrange your decorative top crust over the filling, sealing the edges as needed.
  • Place the pie in the preheated oven and bake for 25-30 minutes, or until the filling is bubbling and the crust is a deep golden brown.
  • Let the pie cool slightly before serving to ensure the filling sets properly.
