Start by heating up the oven to 200°C.
Prepare a baking sheet and line it with parchment paper, then set aside.
Using the parchment paper provided, roll out the first roll of puff pastry and brush it with the lightly beaten egg.
Now add the second sheet of puff pastry and brush again.
Cut in 20 squares and place on the baking sheet.
Bake for 10 minutes, or until golden.
Take the puff squares out of the oven and place the slice of Brie on top, then bake for a further 1 to 2 minutes, just enough for the cheese to melt.
Remove from the oven and add the sauce or fresh currants, the thyme spring or dried thyme and serve immediately.
