Chunky & Buttery Chocolate Chip Cookies

The best chocolate chip cookies, no refrigeration needed!

Ingredients
  

  • 250 g unsalted butter
  • 200 g white sugar
  • 200 g brown sugar
  • 1 tbs vanilla extract
  • 2 large eggs
  • 410 g flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 100 g chocolate chips

Instructions
 

  • In a small bowl, measure all your dry ingredients - minus the chocolate chips.
  • In a larger bowl, cream your butter with the sugars until it's fluffy and light.
  • Add the eggs, one at the time, and keep beating until they are incorporated.
  • Now add the vanilla extract and start adding the dry ingredients slowly - it can get very messy!
  • Once the dry ingredients are fully incorporated, add the chocolate chips and fold in by hand using a spatula.
  • Divide the dough using an ice cream scooper or by hand, rolling so that you create some balls - they shouldn't be bigger than 4cm.
  • Place them on a baking tray lined with parchment paper and bake for 8-10 minutes at 180°C.

Notes

They hold for 5 days in a air-tight container (if they get to last that long!).
