Ingredients
3
eggs
130
g
dark brown sugar
130
g
caster sugar
85
g
vegetable oil
85
g
salted butter
270
g
overripe mushy bananas
270
g
plain flour
13
g
baking powder
½
tsp
ground cinnamon
120
g
chocolate chips
120
g
peanut butter chips
Instructions
Preheat the oven to 165°C and grease a loaf pan and line with baking paper - we usually do two smaller tins.
Beat the eggs and both sugars in a bowl of a standing mixer on medium for 5 minutes, until they are thick and fluffy.
Melt the butter, then add the oil and slowly add to the eggs and sugars as they keep on whisking until everything is incorporated.
Now fold in the mushy bananas and both the chocolate chips and peanut butter chips.
Sift the flour and cinnamon and fold in, with movements from bottom to top until everything is incorporated.
Transfer to the pan and decorate with half a banana and some extra chocolate chips and peanut butter chips for good measure.
Bake for 50 minutes, or until a skewer inserted comes out clean. Let it cool down slightly before moving from the pan to avoid collapsing.
Notes
This will hold for a few days - if it even gets to survive the night! - in an airtight container at room temperature.
