Easiest Banana Bread

Ingredients
  

  • 3 eggs
  • 130 g dark brown sugar
  • 130 g caster sugar
  • 85 g vegetable oil
  • 85 g salted butter
  • 270 g overripe mushy bananas
  • 270 g plain flour
  • 13 g baking powder
  • ½ tsp ground cinnamon
  • 120 g chocolate chips
  • 120 g peanut butter chips

Instructions
 

  • Preheat the oven to 165°C and grease a loaf pan and line with baking paper - we usually do two smaller tins.
  • Beat the eggs and both sugars in a bowl of a standing mixer on medium for 5 minutes, until they are thick and fluffy.
  • Melt the butter, then add the oil and slowly add to the eggs and sugars as they keep on whisking until everything is incorporated.
  • Now fold in the mushy bananas and both the chocolate chips and peanut butter chips.
  • Sift the flour and cinnamon and fold in, with movements from bottom to top until everything is incorporated.
  • Transfer to the pan and decorate with half a banana and some extra chocolate chips and peanut butter chips for good measure.
  • Bake for 50 minutes, or until a skewer inserted comes out clean. Let it cool down slightly before moving from the pan to avoid collapsing.

Notes

This will hold for a few days - if it even gets to survive the night! - in an airtight container at room temperature.
