For the icing

Instructions
Unroll your first puff pastry sheet and cut out 12 ghosts.

Repeat with the second sheet, but use a straw to cut out the eyes on 12 ghosts and set them aside.

Set the bottom part of the ghosts (no eyes) on a baking tray covered with parchment paper, then spoon a little berry jam in the middle of each ghost.

Brush all the sides with some plant based milk, then place the second ghost (with eyes) on top and seal using your thumbs.

Brush the top of each ghost with some extra milk, then dust a little caster sugar.

Bake at 180C for 15 to 18 minutes or until golden.
Let them cool down completely before covering in icing: mix the icing sugar with lemon juice and drizzle on top of each ghost.

3 tsp lemon juice
If your icing goes inside the eyes of the ghosts, pipe some berry jam on top to make them shiny and red again.
Notes
These ghost hand pies will last for up to two days in an airtight container.
