Ingredients
  

  • 1 baguette
  • 250 g full fat ricotta
  • 7 ml extra virgin olive oil
  • 7 ml lemon juice
  • ¼ tsp salt
  • ½ cup walnuts
  • honey
  • fresh thyme sprigs

Instructions
 

  • Preheat the oven to 180C and toast the walnuts for 10 minutes.

  • Let them cool down slightly, then chop into small chunks.
  • Slice the baguette in circles and toast them until golden.

  • In the bowl of your food processor, add the ricotta, extra virgin olive oil, lemon juice and salt.
    250 g full fat ricotta, 7 ml extra virgin olive oil, 7 ml lemon juice, 1/4 tsp salt
  • Move the whipped ricotta to a piping bag, then pipe it on the bread slices.
  • Add the walnuts, then cover with a drizzle of honey and lastly dress with the thyme sprigs.

  • Serve immediately with a nice glass of white wine.
