Spiced Vodka Cream Liqueur

A creamy and spicy vodka liqueur, ready to be gifted and savoured on Christmas day.

- 200 ml water
- 75 g light muscovado sugar
- 2 cinnamon sticks broken in pieces
- 3 cardamom pods bruised to break the husk
- 3 whole cloves
- ½ star anise
- pinch of freshly grated nutmeg
- 350 ml vodka
- 1 tin Carnation caramel
- 300 ml single cream
In a pot, place the water and sugar and turn on the fire to medium heat. Let the sugar dissolve completely.
Once the sugar is fully dissolved, add the spices and bring to a boil.
Cover with a lid and let this mix simmer for 10 minutes.
Remove the pot from the heat and add the vodka, give it a good stir and set aside to infuse overnight at room temperature.
The following day, grab a big jug and pour the caramel in it. Then add the cream, slowly, mixing it constantly so it does not split.
Once the cream and caramel are well combined, strain the vodka infusion and it on top, mixing it carefully, then add a big pinch of salt.
Pour in the bottle of your choice and let it rest in the fridge.
This spiced vodka cream liqueur needs to be served cold, and also stored cold. Make sure it only leaves the fridge as you serve it or gift it.
The spiced vodka, if correctly stored, can last up to 6 months in the fridge.
