- 5 overripe bananas
- 2 eggs
- 1 ½ cups self-raising flour
- ¾ cup brown sugar
Start by preheating your oven to 180°C.
In the meantime, in a large bowl, mash 4 of the overripe bananas until smooth with a fork. Make sure you have very few lumps as it will help with the batter.

Add the eggs to the mixture and with the same fork combine them.

Sift the self-raising flour into the mix and add the sugar. With the fork or a whisk, combine thoroughly the batter, making sure there are no lumps.

Line or spray an 8.5-inch (21 cm) tin loaf. Pour the batter inside. Cut in half lengthways the last banana in and place it on top. Sprinkle some more brown sugar. Place it in the oven and bake for 50 minutes or until a toothpick comes out clean.
Make the banana bread cool off before serving.
- You can keep the banana bread in an airtight container for up to 3 days. Or you can freeze it for up to 6 months, make sure you slice it before and place some parchment paper between slices so you can have one at a time.
- You can add anything you like to this 4 ingredient banana bread, like chocolate chips, peanut butter dried fruits or any nuts you like.
- You can substitute the self-raising flour for 1 1/2 cups of all-purpose flour, 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt.
