The Best Vegan Panna Cotta

Ingredients
  

For the panna cotta

  • 200 g coconut milk cream
  • 300 ml coconut milk
  • 35 g agave syrup
  • 3 g agar agar powder
  • 5 g cornstarch

For the mixed berry topping

  • a handful of fresh raspberries and red currants
  • 1 tbsp granulated sugar

Instructions
 

  • In a pot, add the coconut cream and coconut milk and, on medium heat, warm it up until the coconut cream is completely dissolved.
  • Add the agave syrup and mix in well.
  • Now add the agar agar powder and cornstarch and combine for 3-4 minutes, then turn off the heat.
  • Pour immediately into the pots of your choice and let them sit at room temperature, then once cool enough move them to the fridge and let them rest overnight.
  • When you are ready to serve, cook the mixed berries quickly, then pour on top of each pot and dress with some extra fresh fruit.

Lasts for up to 10 days in the fridge, with no toppings.
