Vegan Hot Chocolate Cookies

Chewy, chocolately and oh so irresistible - these vegan hot chocolate cookies are the ones you need this coming Christmas! The recipe is kindly inspired by the one from daughterofseitan.com.

Ingredients
  

  • 114 g vegan butter
  • 100 g white sugar
  • 100 g brown sugar
  • 6 tbsp oat milk
  • 160 g flour
  • 50 g cocoa powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 6 tbsp vegan chocolate chunks
  • 6 vegan marshmallows chopped into pieces plus extra ones for decorating

Instructions
 

  • Turn on the oven to warm up at 180°C.
  • Cream the vegan butter and sugars using your standing mixer or hand mixer. Once soft and fluffy, add the milk and whisk in until fully folded.
  • In a separate bowl, measure and mix the flour, cocoa powder, baking soda and salt.
  • Fold in the dry ingredients in your wet ingredients until everything is combined. The dough will be sticky and soft, so don't fret.
  • Add the chocolate chips and the chopped vegan marshmallows and combine them in the dough.
  • Shape the cookies into balls, then place them on your cookie tray covered with parchment paper and add a marshmallow on top.
  • Bake for 12 minutes, or until the edges start to firm up.
  • Once ready and out of the oven, bang the tray on the counter to flatten them and let them cool completely before serving.
