Start by preheating your oven to 180°C and prepping a loaf pan with a little oil or some parchment paper.
In one bowl, whisk together your dry ingredients: flour, brown sugar, pumpkin spice, baking powder, and a pinch of salt, making sure everything is nicely combined.

In another bowl, mash the ripe bananas until they’re nice and smooth, then stir in the pumpkin purée, vegetable oil, oat milk, vanilla extract and apple cider vinegar.
80 ml vegetable oil, 150 g pumpkin puree, 130 g ripe bananas, 1 tsp apple cider vinegar, 1 tsp vanilla extract, 180 ml oat milk
Now, just pour the wet ingredients into the dry ones, and gently mix until everything’s incorporated.
Pour the batter into your prepared pan and decorate it placing a banana cut in half on top.

Pop it in the oven for about 60 minutes. You’ll know it’s done when a toothpick comes out clean.
Let it cool fully before slicing.
