Well, we all have our bellies full, possibly nursing a good hangover. And who in the world wants to cook dinner or lunch today, when there’s leftovers from yesterday dinner? Personally, I do not. And I love Boxing Day, because I come from a family where grandma cooks for way too many people. Even though there’s 14 of us normally.
So what a better chance for me to share with you the secrets for the Ultimate Leftover Sandwich? I mean, it’s the ultimate lazy as well as the most delicious sandwich ever.

It’s very easy, but you have to make sure of a couple of things:
Numero 1: have enough bread. Buy more bread that you need for Christmas. You can always freeze it or toast it with some oil/butter for the perfect sandwich crust. ( I tell you a trade secret: most “fresh” sandwiches are made with yesterday’s bread. This is why they are so crunchy and toast so well.) You can also make croutons for some quick and light snacks.
Number 2: the leftovers. Now, for the optimimum flavour of our leftovers, you need to store the oil or juice with them. This keeps them nice and moist and well seasoned too. Ugh, I am already dreaming of that confit garlic that was roasted with the chicken juice.
Number 3: do not add too much spicy sauce or any at all. Spicy sauce may be the best for hangovers (they say) but it will numb your papillae and wont be able to taste that little you still can. Also, we all know the best cure for an hangover is another one.





Number 4: use that extra stuffing. Pop it in the oven for a quick roast, or in the pan for a little texture. There is never enough stuffing in this world.
Well, now that you are all set, just build it up with any leftover you may have, wether it’s duck or turkey. Chicken or beef. Chr.. no wait, not the Christmas Pudding.
And yes, you can definitely add the roast potatoes everyone was too full to finish in. You can work the carbs out later.

God that sandwich looks SO FREAKING GOOD! We did a leftover turkey curry this year and it wasn’t brilliant. I think a sandwich would have been better! x

I’m more of a leftovers on toast kinda girl. Especially if it is something runny like curry or bolognese. A left over toastie is great for the more solid of leftovers. Yum yum yum,

Oooh this sounds amazing! I always love leftover sandwiches. At Thanksgiving this year I had a turkey sandwich with leftover cranberry sauce on it which was amazing. For Christmas though we had ham, and the next day made biscuits with gravy with big ham chunks in it. It was amazing!

Mm! I love a good thanksgiving/christmas leftover sandwich. My favourite part is adding cranberry sauce AND gravy. Sounds weird but It’s the perfect mix to me 🙂
This is interesting. On boxing day, we usually eat leftovers but mostly swahili food but I’ve never tried making a leftover sandwich.
