I know we’re all thinking the same, we are quite late on this food Tok trend and let me tell you, I know. I know we should have jumped on this before and everything else you can think of because, in all honesty, you are probably tired of this crispy rice with spicy salmon deal by now. I am not, though, and can I just say how delicious I have found this to be?

On paper, it looks easy enough for a 3-year-old to whip up, and all those TikTok videos have honestly lied to you and me both. Because this has been one of the recipes that had me – almost – throw in the towel with getting the sushi rice right. 

I am not being dramatic, I promise. I can come through as such, most times, but not this time. That’s because while most times following a recipe it’s easy and straightforward, to the point I can edit it to my taste, this one was pure hell. Let me explain, I have made sushi before, and I have made good sushi before.

Rice is something we eat pretty often and as such, I have learnt to cook it almost to perfection. But this was a different kind of weird, and the rice was the culprit. Because cooking sushi rice, that part was fine. Resting the rice and cutting it, all fine again. Frying the rice? All hell let loose: in a split second, I had rice popping from the pan, rice in my hair, rice everywhere. 

Alas, I can promise you this crispy rice with spicy salmon it’s worth the swearing and sweating you’ll be doing as you try to put it together.

TikTok Crispy Rice With Spicy Salmon – viral Recipe

Aside from the fact that I struggled that much with this recipe for the crispy rice with spicy salmon, you will not even begin to believe me if I tell you how delicious it actually is. Think of this crispy rice recipe as one you will be trying out not only with a sushi-grade salmon mixture but also with other proteins like spicy tuna or even tofu! As long as your crispy sushi rice is nice and well, crispy, then you’re good to go!

What is this viral crispy rice with spicy salmon recipe all about?

We all know TikTok has the power of sending a specific recipe through the roof, and you’ll see if you are an avid user of the app. And this recipe for crispy rice with spicy salmon has been going around since the beginning of 2022 – yes, the year is indeed right! But what’s so special about this sushi recipe wannabe, you might ask?

Well, the crispiness of the rice does add a certain different texture you won’t be getting from your traditional sushi, to start, and this crispy rice with spicy salmon is proof of it. Then the actual salmon, which is prepped with a specific mixture of soy sauce, sesame oil and a spicy mayo sauce. Of course, you’ll have the option of adding all the extra fancy bits like sesame seeds and creamy avocado, but you get the gists of this recipe: crunch, soft, spicy and full of Asian-inspired flavours. So grab your rice cooker, your favourite mayo and all the bits and pieces you will need, because it’s time to make this crispy rice with spicy salmon!

What ingredients do I need for this crispy rice with spicy salmon recipe?

Whenever you check all the trillion videos under the crispy rice hashtag on TikTok, you will realise the ingredients are pretty much the same. You will need sushi rice, which you will need to season with rice vinegar, sugar and kosher salt. The seasoned rice will then need to rest overnight in the fridge, placed in a baking dish covered in plastic wrap. This is done to then be able to cut and shallow fry the crispy rice cakes until they are golden brown, without them losing their shape.  

When it comes to fish, you will need to use sushi-grade salmon or sushi-grade tuna, the choice is yours. We have gone for salmon and have then used both mayonnaise and green onions. Now, when it comes to mayo, you can either use regular mayo or go for the best, which is Kewpie mayo, which is made with egg yolks only and gives this mayo an especially smooth texture and deeper colour.

For the hot sauce, we have gone with Sriracha, a Thai hot sauce made from a paste of chilli peppers, distilled vinegar, garlic, sugar, and salt (Wikipedia). It packs a low to medium heat and goes extremely well with the aforementioned Japanese mayo. The last few ingredients, but definitely not least, will be the lime juice, the toasted sesame oil, the soy sauce and the avocado. Now, to garnish this crispy rice with spicy salmon – but very much optional – we have gone with toasted black and white sesame seeds and a thin slice of jalapeño, but you could use green onions or even fresh ginger. The options are honestly endless when it comes to this crispy rice with spicy salmon!

How do I prepare the sushi rice for the crispy rice with spicy salmon?

Since we’re in the talk for this preparation, you know we have made sushi rice before in the Onigirazu recipe. So this preparation is definitely not new if you’ve been around for a while. It does depend on what method of cooking you are going to choose. Let’s see a few of them:

  • in a rice cooker: because if the Asians do it, it’s definitely the best way;
  • in a pressure cooker like a Ninja Foodi or InstantPot;
  • on the stovetop: as long as you have a non-stick saucepan with a fitting lid, you are good to go;
  • in the microwave with a microwave rice cooker.

What do they all have in common? Given enough preparation and following some easy tips like washing your rice and working out rice-to-water ratios, you will be absolutely fine. The mixture of rice vinegar, sugar and salt will help you achieve that stickiness so characteristic of sushi rice.

How Do I prepare the spicy salmon mixture for the crispy rice with spicy salmon?

For the salmon mixture – or tuna mixture, if you end up going for that one instead – then all you have to do is grab a small bowl and mix the salmon with the mayo, lime juice, sesame oil, soy sauce, Sriracha sauce and green onions. Mix it well, taste it and add Sriracha if needed, then cover it in cling film and refrigerate it until you’re ready to serve.

Now for the rest of the prep: place your hot cooked sushi rice in a big bowl and add the salt, rice vinegar and sugar, then combine with a rice paddle or large spoon until everything is absorbed. Line a 5×5 baking pan with plastic wrap, then arrange the rice to create an even layer, cover with extra cling film and place in the fridge overnight.

The following day, cut the rice blog into 12 equal pieces by placing it on a clean cutting board, using a sharp knife. Heat some sunflower oil in a pan and shallow fry in the hot oil until golden brown on each side, then move onto a plate lined with a paper towel or two so that they can drop any excess oil. Slice your avocado thinly, then prepare the jalapeño and get ready to assemble.

Prep is done, time to serve: place the crispy rice cakes on a plate, then on top of the rice layer each one of them with a few slices of avocado, a heaped spoon of the salmon mixture, then garnish with the jalapeno slice and sesame seeds. Serve the crispy rice with spicy salmon immediately with some extra soy sauce for dipping.

  • 2 ½ cups cooked sushi rice
  • ½ tsp salt
  • 2 tbsp rice vinegar
  • 1 tbsp white sugar
  • sunflower oil for frying
  • For the salmon mixture
  • 250 g sushi-grade salmon chopped into cubes
  • 2 tbsp Kewpie mayo
  • 2 tbsp thinly sliced green onions
  • 1 tbsp freshly squeezed lime juice
  • 1 ½ tbsp Sriracha
  • 1 tsp toasted sesame oil
  • 1 tsp soy sauce
  • To garnish and serve
  • 1 avocado
  • 1 sliced jalapeno
  • toasted sesame seeds black and white

Instructions
 

  • Place your hot cooked sushi rice in a big bowl and add the salt, rice vinegar and sugar, then combine with a rice paddle until everything is absorbed.

  • Prepare the salmon by adding it to a bowl with the mayo, lime juice, sesame oil, soy sauce, Sriracha sauce and green onions.
  • Mix it well, add Sriracha if needed, then cover in cling film and refrigerate until you’re ready to serve.
  • The following day, cut the rice into 12 equal pieces, using a sharp knife.
  • Heat some sunflower oil in a pan and shallow fry until golden brown on each side, then move onto a plate lined with a paper towel or two.
