Easy Paprika Dip

Creamy, lighlty sweet, and quietly addictive, this whipped feta and paprika dip is the kind of thing you put out for sharing and end up guarding with your life.

Ingredients
  

  • 225 g Feta cheese
  • 120 g roasted red peppers roughly chopped
  • 55 ml extra virgin olive oil
  • 30 ml lemon juice
  • 4 g sweet paprika
  • parsley to garnish

Instructions
 

  • Roughly chop your peppers.
  • Roast the red peppers at 200°C for about 20 minutes, until soft, slightly blistered and sweet.
  • Add the roasted peppers to a food processor* along with the feta, olive oil, lemon juice and sweet paprika.
  • Blend until smooth, creamy and softly whipped. **
  • Spoon into a bowl, swirl the top, and finish with sliced spring onion or fresh parsley.
  • Serve with warm pita, crunchy chips or torn baguette.

Notes

* You can also use an immersion blender in case you don't have a food processor.
** You can make the dip even smoother by blending it again; it all depends on the texture you want to achieve.
