Did we ever tell you how much we love summer? Yeah, maybe that was the post you were meant to read today, admittedly. But we have been dishing some great recipes both lately and in our first blogging stint, that it’s only a great idea to collect them all here! So here goes our 10 easy summer recipes you must try!

I love summer. Even if you hear me moan at night that it’s too hot to sleep. I just love summer more than anything else. I like the heat (not at night!), I like the sun, I love everything about it, mostly. But there is nothing better than the food we get to have in summer.

Dinners end up being fresh bread, cheese and meats. Easy to whip up in seconds and so scrumptious! But, it tends to get boring when you eat the same day after day, right? And with all the effort we have been making with meal planning, it would be a shame to let it all go. So the plan is to start introducing either new recipes or old flames to our routine. And we thought about these 10 easy summer recipes you definitely must try!

Of course, the recipes we are going to cover here are to cover all meals and none of them at the same time.

Confusing, I know. But here goes the 10 easy summer recipes you must try. In no particular order, of course.

The Breakfast Items.

I am not saying you should have curds only for breakfast on your toast. I love curd in yoghurt as an afternoon treat or midnight snack. Don’t judge. To kick off the 10 easy summer recipes, then, grab pen and paper for ingredients.

This curd is just to die for, especially if you are used to the usual lemon one. This is softer, sweeter and just a whole other level. I think it’s a bit on the long side when making it, but it’s super easy to whip up and so so worth it, especially when peaches are in season! You can honestly make anything with it, from toast to yoghurt, and anything in between. I wonder if it could work with meat? Maybe too sweet, but I shall try and report back.


DELICIOUS PASSION FRUIT CURD

Yes, another curd from these 10 easy summer recipes list. But – and listen to me before you scroll down. This one is such a decadent curd, so luxurious and creamy. And this one is also less finicky than the peach curd. So a win-win all in all I guess! I’ve honestly been eating this one by the spoon. Terrible, yes, but it’s that delicious! There is a recipe coming up using this curd that I am sure you will absolutely love!

QUICK PEACH & RICOTTA CROSTINI

Peach & Ricotta Crostini

I know, these Peach & Ricotta Crostini are so fresh off the press, but they are oh so good and I cannot stop thinking about them! They are so quick to make and can be quite versatile as well as a main dish if it’s quite the informal dinner or BBQ. I don’t know about you, but anything fresh right now is good in my books. Don’t you feel like some quick fresh food is all you need right now?


QUICK WHIPPED FETA & ROASTED TOMATOES

WHIPPED FETA DIP

Again, a super easy recipe you really need to try. The whipped feta can be ready in minutes, and you can prep it ahead. Even the night before! Of all the 10 easy summer recipes, this one is probably the fastest and effortless of the bunch. You don’t even have to make it look nice, it does it all by itself! Just a great one for last-minute guests too, as long as you keep a block of feta in the fridge.


Now with the only side of the bunch. If you can even call it a side!

This one was a winner, for sure. The one recipe that will take the longest to make, but oh so worth it. The bread itself it’s just as soft as snow, and paired with the homemade garlic pesto, it’s bomb! It’s not vegan (the pesto is) but I am sure you can attempt something similar by replacing some of the ingredients for vegan alternatives.


There is no dinners or meals in general, though, with no drinks. Am I right?

There is no day starting without a huge glass of this in summer. God bless cold brew coffee. Fred has shared her personal recipe which we make pretty much daily around here. It’s refreshing, it’s satisfying on a hot morning when you just woke up from a terribly hot night. But also satisfying on any day, from any night. I honestly would bathe in this, and it’s probably good for the skin (hopefully).

Before we dive into the grown-up drink of choice this summer, let me tell you about this super scrumptious strawberry lemonade. It doesn’t last for more than a day at our house, it’s so refreshing you’ll keep going back for more. And while this version is very much kid-friendly, it takes a split second for you to spike this. Gin or Vodka alike, this will make the perfect cocktail or mocktail as your heart might desire.

Of all the 10 easy summer recipes I have collected so far, this Cantaloupe melon cocktail is the most surprising. Not only the combo melon-cucumber was out of this world. And even though I am not big on gin (sorry, I know) this whole combination makes it so extra! You could even freeze the melon balls and replace the ice with them, so to keep it as cold as you can. Either way, you will love this one so get shaking!


And last, but definitely not least in these 10 easy summer recipe collection, is the desserts. Probably one of the most important parts of any meal.

NO CHURN STRAWBERRY SORBET

A 3 ingredients, no fuss, no stress sorbet. It does what it says in the tin: cleanse your palate after a nice dinner, refresh your mouth on a hot summer afternoon. It has superpowers, I tell you. And, if you’re into some sort of no-waste cooking journey, the lemons go in with full skin on. Like, all you’ll end up wasting is the green bits of the strawberries. Save the lemon pits and let them dry, then plant them and have your own lemon tree. It’s that easy!


EASY COCONUT WATER & CITRUS POPSICLES

Cristina’s latest recipe (her last one was Christmas 2020!) was of these amazingly refreshing coconut water & citrus popsicles. They are ready to whip up and go in the freezer, so start to squeeze those lemons, limes and oranges because it’s about to get hot hot hot!

    I’ve had lemon curd, and orange curd, but never peach. Nor passion fruit. Certainly want to give those a try. I hate garlic (and it hates me!) so I’ll give the wild garlic bread recipe a miss 😉 But I will try the cold brew coffee – to drink, not to bathe in!

  11. This all look incredible! I got excited when I saw the Strawberry sorbet – if my niece doesn’t eat all of mine I am excited to make them this year – but if she does i may just have to substitute for raspberries which will be just as delicious!
