If there are things that scream summer to me from every roof are ice cream, popsicles and sorbet. Hence why today, we are sharing with you this three-ingredient strawberry sorbet without an ice cream maker. Yes, you read that right! Three ingredients and nothing more, because when you get great strawberries, there’s no need to take the spotlight away from them.

And yes, I hear you behind there, can you make strawberry sorbet without ice cream maker? I can bet you can! All you need is a blender and a freezer. And maybe a bit of patience, but that’s about it! As easy as they can make it and very beginner friendly. For all those out there that have a complicated relationship with cooking like me.

By now, and if it wasn’t clear enough maybe we are not doing that great of a job, you know that strawberries are a must for us. Call it what you want: strawberry pie, strawberry mini cakes, strawberry lemonade. We even have a whole strawberry recipes board on Pinterest. You call it, we tried it. You call it and most probably it’s on here, or on its way to being written. It’s a bit of an obsession. Therefore this 3 ingredient strawberry sorbet recipe was a no-brainer.

But what is great about this recipe? We are not only here for a quick frozen dessert, we are also here for the goods! Lemon and strawberries are packed with good things.

What are strawberries? And what is good about them?

This red food we see so much of around during summer is not actually a fruit! You read that right. Strawberries are actually an aggregate accessory fruit, which means that the fleshy part doesn’t originate from the ovaries of the flower. Therefore they are not considered fruits. The fleshy part comes from the receptacles that hold the ovaries. The small seeds on their flesh, are actually the ovaries of the strawberries and contain seeds inside.

Strawberries are great as:

  • a source of vitamin C and manganese,
  • rich in antioxidants and plant compounds,
  • contain potassium and folate,
  • can help improve vascular function, heart health and blood sugar controls. Also can help reduce inflammation and help prevent cancer.

What is good about lemons?

Lemons as much as strawberries are a powerhouse of good things! Lemons are great for your intake of vitamin B6 and potassium. As well as citric acid and vitamin C. Lemons can help prevent the formation of kidney stones and they are important for skin health and for the immune system. As well as helping lowering blood pressure. What’s there not to love? As usual, as well as strawberries, they should be eaten in moderation.

What ingredients do I need to make this strawberry sorbet without ice cream maker?

As the title suggests, you only need three ingredients for this strawberry sorbet! Yes, you did read that right! All you need is strawberries, lemon juice and sugar. Now you can either use frozen or fresh strawberries. The consistency might be less liquid if using frozen strawberries, but it doesn’t change much on the overall result of the recipe. All of these are easy-to-find ingredients in any supermarket.

Is it easy to make this strawberry sorbet without ice cream maker?

This is one of the easiest recipes to enjoy a strawberry sorbet. You might have gathered that I am not the sister that loves cooking. I am the one that needs foolproof recipes and very few things to use. And this is one of them rest assured! Your only best friends here are good ingredients and a food blender!

Can I find the ingredients easily?

Everything in this recipe is really easy to find. From strawberries to lemon and sugar. The only recommendation I would have is to use lemons and not lemon juice pre-squeezed only for a flavour reason. And to get the best strawberries you can find if you are going for fresh ones. Remember to wash them thoroughly either under water or in a mix of three cups of water and one of vinegar to get rid of any possible pesticides residue.

Can I use an ice cream maker with this recipe?

Now, I have never used an ice cream maker. But I guess it shouldn’t make much of a difference if using one. I love to keep things simple and mostly effortless. I also know that ice cream machines are not something everyone has, but a food blender is easier to find in any kitchen. Just follow what instructions your machine gives you.

What’s the difference between sorbet, sherbet, gelato and ice cream?

The difference between sorbet and sherbet all comes to texture and dairy. Sorbets are just fruit puree and sugar, as simple as that. You might find water and some flavourings added, but it’s basically a blended mixture of fruit and sugar and then frozen. Gluten and dairy free, so easy to enjoy with everyone.

Sherbet on the other hand contains dairy. Which helps create a much creamier texture to this frozen dessert. Think of a richer sorbet, where you will find eggs, milk, buttermilk, cream or gelatin in the recipe.

When we talk about gelato instead, we have a frozen dessert that contains cream, milk and sweetener. It’s churned slowly, so the texture will be much thicker than ice cream.

Lastly, ice cream. It’s another frozen dessert that will add egg yolks to the mix of gelato. So it will still contain milk, cream and sweetener. It’s churned at a higher velocity than gelato, which gives it a fluffier and creamier texture.

Can I sub anything out of this three ingredients strawberry sorbet recipe?

As it’s only three ingredients, subbing might be difficult. But using a different fruit is possible, as well as an alternative to sugar. Whether it’s honey or agave, you just need to check your consistency. This sorbet recipe doesn’t call for syrup, but as usual, this is just a map, so if you feel like having it sweeter, add to your heart’s content!

Can I use the same recipe with different fruits?

You sure can! As usual, it depends on what fruit you will use. Some might contain more or less water and release it when blending, but with some adjustments as you see fit, this sorbet recipe can be a sort of base map. Therefore, get any fruits you like and give it a try!

How long does this strawberry sorbet last in the freezer?

You can keep this three-ingredient strawberry sorbet in the freezer for up to a month. All things considered, if this lasts, that’s for sure! Just take it out 10-15 minutes earlier before serving, so you can enjoy this delicious dessert at its best!

Three ingredient strawberry sorbet without ice cream maker

Looking for a quick sweet treat for summer? This three ingredients strawberry sorbet recipe is easy and so quick to make! And it doesn’t require an ice cream maker, so everyone can enjoy this refreshing treat! 
Prep Time 15 minutes
Course frozen dessert
Servings 8

Ingredients
  

  • 2 lemons
  • 400 g white sugar
  • 400 g strawberries

Instructions
 

  • 1. Wash thoroughly one of the lemons. Chop it with the skin into small pieces. Proceed to remove the seeds.
  • 2. Blend in a food processor the cut lemon and the sugar, until it’s well combined. Place the mixture in a bowl and set it aside. 
  • 3. Wash thoroughly the strawberries under the tap or wash them in a mix of vinegar and water (3 cups of water and one of white vinegar – and then rinse under cold water). Cut the strawberries and blend them in the food blender. 
  • 4. Add to the food blender the mix of lemon and sugar. Add the juice of the second lemon too and blend all together for a couple of minutes. 
  • 5. Place the blended mixture in a container. You can either use a tin loaf or a glass container and freeze it. Check it and break the ice after a couple of hours with a fork. Let it rest in the freezer for at least 12 hours or overnight for a better result. 
  • 6. Take it out of the freezer 10 minutes before serving and enjoy! 

Notes

The strawberry sorbet will be pretty liquid when taken out of the blender. But don’t worry, it’s totally normal! The freezer will do all the work for you. 
You can freeze it for up to a month.
