5 ingredients Mini Strawberry Cake Pots

If you are after a family recipe, you got the wrong family. Not only we don’t really have any family recipes, but we also don’t tend to note down anything about them. This means most times we try and work out what was in something by making it over and over again. Gladly, these mini strawberry cake pots are the exception to the rule.
Our mother is a good cook. Like, a good one, definitely different from both our grandmas. But – there is always a but, you know? – she just doesn’t enjoy cooking. She is the best mum we could ever get, but boy the kitchen it’s not her realm. Which is a good thing – we learned all about independence and strength from her, rather than how to cook.
So how do I come about and share this recipe for mini strawberry cake pots? Well, there is quite the story behind this.
I was born in May, the prime season for strawberries. My first birthday cake ever was a strawberry & cream cake with plenty of ladies’ fingers drenched in sugary strawberry juice. I have a picture of this with my grandpa and mum holding me somewhere at home, might include it here one day.
Surely, I was obsessed with strawberries then, and I still am to this day. I just love their flavour and looking at them makes me happy – is that weird?! We have grown our own for two years now and I found it rewarding if it wasn’t for the snails having half our crop this year. Oh well, I guess we have done something for someone, no? At least someone enjoyed them!
So this strawberry cake recipe holds a special place in my heart. And in thirty years, it still needs to find a good contender. And doubt I will ever love something more than this on my birthday.

What are Strawberries? are they fruits?
We have already spoken about this in our easy strawberry lemonade recipe, but I am going to repeat it here anyway. Strawberries are actually not berries and neither fruits. They are an aggregate accessory fruit. This means that the fleshy part of it does not originate in the flowers’ ovaries, but from the receptacles that hold the ovaries.
The small seeds strawberries are covered with, known as achene, are actually the ovaries of the strawberry and contain the seeds inside them. That’s why it’s called an aggregate accessory fruit. Here to surprise someone else about this. I couldn’t be the only one not knowing!
Are strawberries good for you?
Well, now – like with everything, you need to eat them in moderation. And I don’t mean only the mini strawberry cake pots. I mean all of them. Why? Let me show you.
First of all – let’s go with the good:
- strawberries are an excellent source of vitamin C and manganese;
- they also contain decent amounts of folate and potassium;
- very rich in antioxidants, fiber and plant compounds, they might have benefits for heart health and blood sugar control;
- also serve as a prebiotic, which means it’s great for your gut health;
- even considering their sweetness, they don’t contain a lot of sugar and are low in calories;
- may improve heart health, lower blood sugar levels, improve vascular function, may help delay age-related memory loss, reduce inflammation and help prevent cancer. (Web MD)
What’s the not-so-good?
- if not washed properly, they also carry a risk of pesticide residue – but we’ll cover cleaning at the end;
- it’s also fairly common to be allergic to them;
All in all, as I said, as long as you eat strawberries in moderation, you shall be fine. The recommended serving size for a day is 8 strawberries, but you’ll probably be exceeding this with the mini strawberry cake pots.
Can I swap something from these mini strawberry cakes?
Honestly speaking, these mini strawberry cake from scratch have so few ingredients it’s difficult to swap something out. In case ladies’ fingers are hard to come by or not to your taste, you can swap them for something else or make them at home yourself (they are not as difficult as they might look). Most recipes call for sugar, eggs, vanilla extract, flour and cornstarch, so easily pantry staples.
But beware that texture and soaking can be different we have all been there and it could come out a complete mess or puddle.
Can I make the mini strawberry cakes vegan?
If you are able to find an alternative to ladies’ fingers, I don’t see why not. There are also a lot of recipes to make homemade ladies’ fingers that are vegan right now, so it shouldn’t be much of an issue.
Vegan cream is widely available in supermarkets nowadays, so it’s all about checking the best option for you. We have made a version with vegan cream and digestive biscuits and it was a good one!
Does this recipe work also on a bigger size?
These are just small batch mini cakes, but this strawberry cake recipe can easily work on a larger scale. Depending on how many people you have to feed or considering your cake pan, you just have to add more fresh strawberries to the count.
We usually make a larger batch more than the one size cakes, simply because we can’t have enough and as soon as you try it, you will know what I mean!


It’s the right season for the mini strawberry cake pots.
Anyways, this is my mother’s go-to recipe. But rather than making it full-size, we went for these mini strawberry cake pots instead. Similar to a tiramisu, in a way, minus the coffee. And the mascarpone. So technically, nothing like tiramisu in taste, but you get the gist.
It’s such a fresh cake to have – especially with the heatwave we’re currently battling in the UK at the moment! Or in general the perfect summer easy dessert to whip up last minute. Perfect for BBQs or when guests come around unannounced.
Is it just us? How hot (hot) is where you live? We have struggled with sleep these past 4 nights – as in, we had barely any sleep to be completely honest with you. And during the day we are able to sit outside the flat, but very much not functioning. So a lot of the things we’re meant to be doing…well, they have to wait!
is using frozen strawberries recommended?
I am usually very flexible, but in this case, only fresh strawberries will make the trick. As well as using fresh lemons instead of concentrate. So the answer is no.
Why you might ask? It’s a question both of flavour and texture. You will put the strawberries to macerate with lemon and sugar to get that juice out of it, that strawberry flavour that we so much love. And frozen strawberries could also expel water while defrosting and make this much more diluted.
How to make these mini strawberry cake pots?
The process is quite easy and straightforward. You will want to wash first your fresh strawberry, remove the leaves and chop them. Then put them to macerate with lemon and sugar in a bowl, wrap it and leave it in the fridge. The longer they sit there, the more juice you’ll end up with (it won’t be like a strawberry puree, you will still have chunks to add texture). Then whip your cream and soak your lady’s fingers in the juice of the strawberries. Now the best part, get assembling.
Anyway, before I turn this whole thing into a moany little post, let me show you the essence of strawberry flavour in a pot!

Mini Strawberry Cake Pots
Ingredients
- 500 g of fresh strawberries
- juice of 1 lemon
- 6-8 tbsps sugar
- 1 packet of ladies fingers or savoiardi
- 250 ml double cream + 1 tbsp sugar
Instructions
- Wash the strawberries, remove the green leaves and then chop them into small bits in a big bowl.
- Squeeze the juice out of the lemon and put it on your strawberries, then sprinkle the white sugar and mix well.
- Cover with cling film and leave it to rest overnight in the fridge, so that all the juice will come out from the strawberries. A few hours will do absolutely fine ideally, at least a couple of hours in the fridge will still do the trick.
- When you are ready to assemble, whip the cream with just a tablespoon of sugar and set it aside.
- Take all the pots you may need, wash and dry them.
- Start by measuring how big the chunk of ladies fingers will need to be to fit comfortably in the vessel of choice. Layer some cream at the bottom of the pot, then start dunking the ladies fingers in the strawberry juice and place them inside your pot.
- Add a teaspoon or two of the strawberries, then add the cream. Keep layering until you have no space left.
- We have decorated with some extra cream piped nicely, then half a strawberry.
- Put each pot in the fridge for a good 3 hours to rest, so that the juice will make the ladies fingers soggy and nice.

Do you see why we love these mini strawberry cake pots? Not only do they take relatively no time to make (if you exclude the resting time), but they are also so so yummy!
We have tried our hand at decorating the mini strawberry cake pots by placing half a strawberry onto each side of the little Ikea pots we used. Plus, we also attempted piping fresh cream to the top. If you fancy doing the same, I would recommend smoothing the top properly before you pipe it. We went for some very easy piping, but you do you.
You can make these single-serving pots transform into a giant delicious cake, just swap the mini pots for a large tray and you’re sorted. The decoration is really up to you, but I guess something similar can work? Also – just make sure you keep it as long as possible to rest in the fridge so the biscuits can soak properly.
And before I forget – storing the mini strawberry cake pots. It goes without saying they need to be refrigerated. And also, I would not keep them for longer than two days – we’re talking about fresh cream after all!
Cleaning the strawberries.
On another side note – I seem to be full of these today! – cleaning strawberries seem like something everyone is very concerned about. Yes, it’s been all over socials – TikTok, I see you – that if you put your strawberries in water and salt all the gunk comes out. I am sure we can agree to disagree on this. Or on our grandma’s method. But there is no denying that you need to wash them strawberries thoroughly.
So the best way we found – without making it gross, that is – it’s as below:
- place the strawberries in a bowl with water that is slightly warmer than their temperature;
- now, using your hand, just stir them for a minute and rinse off.
Easy peasy, right? And you can use them now for your mini strawberry cake pots. Win-win right?
