When planning the recipes for this coming Christmas back in June (I know!!) I was challenged by a friend to do something more English. And how could I refuse a challenge? So this is honestly how this white chocolate fudge with cranberries and walnuts is come about.

Back in the day, must have been 2014 or something, I remember I applied for the Great British Bake Off or whatever it is called wherever you are from. I had nailed my application somehow, but when it came to chatting for an initial interview over the phone, that’s when it went downhill fast. You might ask why? I know I would. And it’s no secret, to be fair, as I have kinda shared that with the world, no shame. I had no clue about English baking staples. No clue what a scone contained, but I could easily eat so many my stomach would hurt. I didn’t know what the most basic of bakes in this country I have called home for now 12 years contained. Which is honestly saying a lot about me, isn’t it?

Alas, even though you don’t really bake fudge, I thought I’d give it a shot nonetheless. I am sure this white chocolate fudge with cranberries and walnuts will be a winner in your family this coming Christmas. How do I know? Well, really, who can resist fudge? I know I cannot. But one step at the time, still.

Now, I know this whole story here makes no sense considering this is a no-bake recipe, but give me some credit. I had never made white chocolate fudge – or fudge, for that matter – so I had to make sure I would correct this.

What is fudge?

Fudge is a type of sugar candy that is traditionally made using sugar, butter and milk. While the version I have made does contain only 3 basic ingredients, these are not the ones. But one step at the time. Fudge is a traditional American sweet, with plenty of variation available. Here in the UK, the traditional fudge we all know and love is made with chocolate also, and the most famous one is made in Cornwall.

It originated in the late 19th century in the States, and it became quite popular due to the decreasing costs of refined white sugar. But also down to the fact that you were able to make it at home with no particularly special equipment required.

The texture of fudge is what makes it the candy everyone wants. In the traditional recipe, you would need to be very careful with the crystallization of the sugar into large crystals. You will need a smooth, sweet texture for your fudge to be perfect. But what if that it’s easier said than done? That is where my version of this white chocolate fudge recipe comes in handy.

What ingredients do you need to make fudge?

This white chocolate fudge is so easy, you’ll be making more and more as you keep on snacking on it. It’s delicious, sweet to the right point and the cranberries add a whole extra layer of cut-through acidity to balance the sweetness. The walnuts are able to create that crunch you need, and you will end up loving it. All of it.

You will need 3 basics ingredients for the base of this fudge, and that is sweetened condensed milk, good quality white chocolate and vanilla extract. Simple, easy, and possibly all stuff you keep in your pantry anyway? Then you’ll be using dried cranberries and walnuts, of course, but the brand and all is really up to you.

Best quality white chocolate is a must here, because white chocolate is such a vulnerable one to deal with, the better the quality, the easier it will be for you.

How do you make white chocolate fudge?

White chocolate is hard to work with, even I dare calling it a bitch when melting. But together with the sweetened condensed milk it is a little easier to handle, I promise. So get ready, because you’re about to have fun making this.

Is this white chocolate fudge made with literally 3 ingredients? Yes, yes it is. What you’ll do is place the broken white chocolate and tin of sweetened condensed milk in a microwave safe bowl. You will be melting everything in the microwave, then add the vanilla extract. Easy peasy. Adding whatever your mind might want. In this case cranberries and walnuts, then placing it in a tin covered in parchment paper or foil. Let it cool down in the fridge, then you are ready to cut and eat!

Can I substitute anything in this recipe?

You can decide to use a different kind of chocolate. Or even chocolate chips if you prefer or if that is what you have on hand. This is really down to you! The vanilla extract can also be omitted, as it will not add or remove anything that will ruin the recipe in any way.

Also, as mentioned, you can replace the cranberries and walnuts with anything that might tickle your fancy. From adding peanut butter to chocolate smarties and similar. You will have the time of your life decorating this and if you also involve the kids, it’s bound to be a great one!

Tips & Tricks

Make sure you do melt the white chocolate and sweetened condensed milk in 30 seconds splits. Take the bowl out of the microwave and mix everything properly before returning to the microwave and giving it another 30 seconds. It’s going to take a bit, but make sure you mix it every time.

I have decorated the top of our white chocolate fudge, so I have not covered it to go in the fridge. It’s a good idea to cover it in cling film as it rests in the fridge so it does not attract any smell of anything that could be in the fridge. Fudge smelling like onions? No thanks!

White Chocolate Fudge With Cranberries & Walnuts

A smooth and sweet white chocolate fudge made using 5 ingredients and a microwave. Easy, fast and oh so tasty!

Ingredients
  

  • 300 g white chocolate
  • 200 g condensed milk
  • 1 tsp vanilla extract
  • 80 g dried cranberries
  • 50 g walnuts

Instructions
 

  • In a microwave-safe bowl, add the condensed milk and chopped white chocolate. Mix it well with a spoon.
  • Place the bowl in the microwave and melt in bursts of 30 seconds, making sure you mix it well at every interval. 
  • Once melted, add the vanilla extract and stir in well.
  • Add 3/4 of the dried cranberries, and 3/4 of the walnuts, then fold in and set aside.
  • Cover a tray with parchment paper and pour in the fudge mix, then sprinkle with the leftover cranberries and walnuts.
  • Place in the fridge for 2 hours or until completely solid. Cut in cubes and serve.

Notes

This will be fine for up to two weeks, stored in an airtight container.

  2. This fudge looks amazing! I love fudge but find the kinds I can buy locally are all shipped in from bigger, commercial companies. Premade fudge just does not have the same rich flavor and texture as homemade fudge, so I love your flavor combinations and easy recipe as fudge makes a fun gift as well.

  8. I was expecting a lot of additional sugar to be involved in this recipe, but I guess all that sugar exists in the while chocolate? And white chocolate is pretty much all coco butter, so I guess you don’t need to add more butter either.

    The recipe sounds easy, and I love white chocolate, fudge, and cranberries in food, but I’ll leave the walnuts out of it
