Scrumpy Spicy Eggnog Nicey

My first sip of spicy eggnog, I remember it way better than you’re normally meant to. And usually, for something to be so unforgettable, you’d expect for it to be great. Not here, not now. My first sip of eggnog was in a Starbucks Christmas cup and it was disgusting. Not the start to this post I had ever envisioned, you know? But let me get there at my own pace, will you?
I am now completely sold, like 100% sold to the spicy eggnog movement. And, as with most things, that’s because I ended up deciding to make it myself.
When planning Christmas last year, the girls and I realised we were lacking in the drinks department. So I picked the one drink I knew I loathed. Because that’s what you when you need to conquer your fears. Or something along those lines, you know? I knew I needed a recipe for the perfect spicy eggnog, one that would redeem all the bad eggnog I had before. So what did I do? I obviously went searching on Pinterest. However, and I said this before, that only means losing yourself and getting distracted by the myriad of things you don’t need – but will eventually try out because, yes. Am I the only one struggling with getting lost in Pinterest? No? Good, at least I know that.
And to my surprise, though, in the end finding the recipe was easy enough. To the point, I decided to make it almost immediately, and it’s the one from Imma at Immaculate Bites. Just a few changes here and there, but you’ll see. All I am saying right now is that my distaste for eggnog has flown away, replaced by the love for this spicy eggnog. To say I was licking the pot before giving it a good wash would not cover it all. It’s just so delicious, you will not be able to stop yourself from going back to it constantly.

What is eggnog?
Eggnog is a rich, sweetened, dairy-based drink that is originally from the UK, even though it’s pretty popular in the United States and Canada. It can be easily spiked, which is always a plus, with distilled spirits like brandy, rum, whisky or bourbon. You can find it pretty much everywhere in shops and coffee shops in the US. And while it’s not as common anymore here in the UK, you’ll be able to get your fix at Starbucks.
The base for all eggnog is – you guessed it! – egg. You’ll then add milk, cream and spices. And you can spike it too, but that is really up to you both whether you want to do so or not, and the choice of alcohol you want to use.
What ingredients do I need to make this spicy eggnog?
Eggs are your main ingredient here, egg yolks in particular. These need to be as fresh as possible, so make sure yours are too. You’ll then need all the dairy: whole milk, heavy cream and condensed milk. We have used condensed milk to have a thicker, more custard-like. You can use evaporated milk if you find condensed milk too strong and overpowering. A lot of people also use egg whites, but I found that just egg yolks work better for a custardy like texture.
In terms of spices, then, we have some of my favourites: freshly grated nutmeg, cinnamon and cloves. Make sure you fish out these little bad boys as they can taste very bitter when chewed on! The spices are what make this eggnog a spicy eggnog, and this spicy eggnog recipe is all you need in your life.
How do I make this spicy eggnog?
The process of making this spicy eggnog is as easy as mixing the egg yolks and sugar in a pot, and then adding the rest of the ingredients and cooking. Bish, bash, bosh. Tasty, creamy and ready in minutes. All you will do after cooking is add the vanilla extract, pour in a mug and enjoy it with your legs up, reading a great book. Or watching a very Christmas-sy movie. Can it get any better than this? I don’t think so, of course!
So here goes the magic: spicy eggnog recipe, all for you.
Homemade Eggnog
Ingredients
- 8 large egg yolks
- 150 g sugar
- 120 g heavy whipping cream
- 360 ml whole milk
- 1 tin condensed milk
- ½ tsp ground nutmeg
- ¼ tsp ground cinnamon
- 4 whole cloves
- ⅓ tsp salt
- 1 tsp vanilla extract
Instructions
- In a pan, whisk the egg yolks and sugar until well combined.
- Add the cream, milk, condensed milk, spices and salt and bring to a simmer for a few minutes, until it starts to thicken.
- Remove from the heat and stir in the vanilla extract, then serve immediately.
- If storing for later, refrigerate for up to one week.

I have been drinking this Spicy Eggnog by myself, or better…spooning this off a cup by myself: it was thick and nice, a great not so light way to end the evening while watching The Crown on Netflix. I am about to remake the next batch and I cannot wait to savour it during my week or so of holiday during Christmas!
Have you ever had Eggnog before? It’s lush and spicy, so very easy to make and can be also made ahead of time if you wanted to serve it after dinner. All I am trying to say is that you need to make this sooner rather than later. The spices in it make it very Christmas-sy and delicate at the same time, and if thick enough, can be eaten as a dessert instead. Don’t thank me just yet, but you also can do that now if you fancy, I am open ha!
The recipe I used was slightly different and had a few different stages I did not follow…I am sometimes lazy like that, so bear that in mind. It still came out absolutely banging and I couldn’t avoid sharing this fabulous recipe with you. The original recipe for spiced eggnog also called for evaporated milk, not condensed – but then again Fred seems to be convinced they are actually the same thing and I can’t bear to fight her over this. Sisters, what can you do?
