I was never a fudge gal, really. I always found it grainy and annoying on the palate, giving me shivers whenever I tried to take a good bite out of a chunk. But technically, I had the best fudge, made with Cornish clotted cream and all – yet, unsatisfied. Or better, uninpressed. So I was of course unphased when we decided to attempt making our own first batch a few Christmases ago, this white chocolate fudge with cranberries and walnuts. Yes, it was easy. What ingredients do I need to make this mini eggs fudge?
You won’t need many ingredients to make this mini eggs fudge, let’s see them together:

How do I make this mini eggs fudge?
The process to make this mini eggs fudge is pretty much identical to the one we used to make our peanut butter fudge, hence it will take minutes to whip up and just a couple of extra steps in order to incorporate the Cadbury mini eggs into the fudge.
First off, melt the butter in a pan then add the milk and brown sugar. Bring the mixture to a boil and boil it for 2 minutes, stirring frequently.
Remove the pot from the heat and add both the peanut butter and vanilla extract. Add the icing sugar to the bowl of your standing mixer, then turn it on medium and start pouring the peanut butter mixture into it, beating it until smooth. Let it cool down slightly before adding half of the mini eggs to it and fold them in.
Pour the mini eggs fudge mixture into an 8×8 inch pan covered with parchment paper and add the rest of the mini eggs to cover the top. This is optional, but very much a nice little addition to the scrumptiousness of this easy no bake Easter mini eggs fudge. Place the mini eggs fudge in the fridge to cool down for at least 1 hour before cutting it into portions and enjoying it. It will last in the fridge for up to 4 weeks, placed in an airtight container.
You can also decorate the mini eggs fudge with extra chocolate chips or Easter sprinkles if that is what you like – or you have eaten all the mini eggs beforehand, likewise.
Easter Mini Eggs Fudge
Ingredients
- 114 g butter
- 455 g brown sugar
- 120 ml milk
- 180 g peanut butter
- 5 ml vanilla extract
- 440 g icing sugar
- 100 g mini chocolate eggs
Instructions
- First off, melt the butter in a pan then add the milk and brown sugar.
- Bring the mixture to a boil and boil it for 2 minutes, stirring frequently.
- Remove the pot from the heat and add both the peanut butter and vanilla extract.
- Add the icing sugar to the bowl of your standing mixer, then turn it on medium and start pouring the peanut butter mixture into it, beating it until smooth.
- Let the mixture cool down slightly, then fold in half of the mini chocolate eggs by hand.
- Pour into an 8×8 inch pan covered with parchment paper and add the rest of the mini eggs on top to decorate.
- Let it rest in the fridge for at least an hour before slicing.
