When it comes to winter, some of my absolute favourite things to do is drink hot chocolate. And there is something special about these vegan hot chocolate cookies, let me tell you that. Because first off, you are not getting any milk of any sort ready. And you are not going to have to open sachets and stuff, because hey! These vegan hot chocolate cookies are there and ready to rock your world.

But let’s do one thing at a time. And start from the very beginning, by sharing that no, this recipe does not belong to any of us. We have not developed it ourselves, but it’s all from Mimi at daughterofseitan.com. We had seen these as we were checking our Pinterest and we tried them right away. And since then, we have never stopped making these! The vegan hot chocolate cookies have a soft, chewy centre and a crispy outside. They are pretty easy to make and take little to no effort. Plus did I mention they are vegan? Like, fully vegan and fully flavourful – the best combo when it comes to a comforting cookie to serve this Christmas!

We finally arrived in Italy this December after travelling for a few days, and I made a batch of these vegan hot chocolate cookies for our travels. What a brilliant way to wake up! A cup of milk, a couple of these cookies and we were ready to hit the road again!

So what’s up with these?

Alas, I am going to stop blabbing. But before I do so, know that these are the perfect Christmas cookie. First of all, they are perfect to be gifted. And secondly, they are simply too good not to make a full batch for yourself. Because these vegan hot chocolate cookies are irresistible – take my word on this!

What are these vegan hot chocolate cookies?

These vegan hot chocolate cookies are what dreams are made of. I am not even kidding. The crunchy outside and soft middle are honestly all you need to know here. They are very much chocolatey and the marshmallow bits add to this a lot. It would honestly be as if you are drinking a cup of rich hot chocolate! And to add to this, they are also vegan – and they can be made gluten free too. If that isn’t brilliant, I don’t know what to tell you.

What ingredients do I need?

These cookies are made using some very simple ingredients, most of which should already be in your pantry. You will need vegan butter or margarine, white and brown sugar but also plant-based milk. When it comes to the milk, we have opted for oat milk, but you can use soya milk too. Or even hazelnut milk – I am sure it will complement the chocolate recipe so well! Then of course it’s time for the dry ingredients like flour and cocoa powder, baking soda and salt. And last, but very much not least, we are looking at vegan chocolate chips or chunks and vegan marshmallows. When you think of marshmallows, you will be happy to know there are now plenty of options on the market. And you will most definitely be spoilt for choice.

How do I make these vegan hot chocolate cookies?

You will start by preheating the oven to 180°C, then you will line your baking sheet and set it aside.

In the bowl of your standing mixer, or in a medium mixing bowl, you will cream the vegan butter and sugars. Once soft and fluffy, you will add the milk and whisk in until fully folded. In a second bowl, measure and mix the flour, cocoa powder, baking soda and salt. Then, you will fold the dry ingredients into your wet ingredients until everything is combined. The cookie dough will be sticky and soft. You can finally add the chocolate chips and the chopped vegan marshmallows and combine them in the dough quickly.

It’s time to shape the cookies into balls, place them on your cookie tray covered with parchment paper, and add a marshmallow to each cookie. And finally bake them for 12 minutes, or until the edges start to firm up. Once ready and out of the oven, bang the tray on the counter to flatten them and let them cool completely before serving. Yum and yum!

Can I change anything in this recipe?

You can indeed! Firstly, you can choose both the cocoa powder and vegan marshmallows & chocolate chips of your choice. Favourite brand and everything, because we do know everyone has their own! And if you feel brave enough, you might even consider making the marshmallows yourself!

If you opt to make these vegan hot chocolate cookies gluten-free, then you will be happy to know you can change the flour to a gluten-free mix of your choice. And, as mentioned, you can pick the plant-based milk you prefer among the many available on the market.

Ingredients
  

  • 114 g vegan butter
  • 100 g white sugar
  • 100 g brown sugar
  • 6 tbsp oat milk
  • 160 g flour
  • 50 g cocoa powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 6 tbsp vegan chocolate chunks
  • 6 vegan marshmallows chopped into pieces plus extra ones for decorating

Instructions
 

  • Turn on the oven to warm up at 180°C.
  • Cream the vegan butter and sugars using your standing mixer or hand mixer. Once soft and fluffy, add the milk and whisk in until fully folded.
  • In a separate bowl, measure and mix the flour, cocoa powder, baking soda and salt.
  • Fold in the dry ingredients in your wet ingredients until everything is combined. The dough will be sticky and soft, so don’t fret.
  • Add the chocolate chips and the chopped vegan marshmallows and combine them in the dough.
  • Shape the cookies into balls, then place them on your cookie tray covered with parchment paper and add a marshmallow on top.
  • Bake for 12 minutes, or until the edges start to firm up.
  • Once ready and out of the oven, bang the tray on the counter to flatten them and let them cool completely before serving.
