This blue spirulina matcha latte is a refreshing iced drink made with matcha, milk, and a light, airy spirulina cold foam, because who said healthy drinks had to be boring? When I first tried matcha powder, let’s say that my first impression was not the best and for a few years, I never tried it again.
But fast forward to my years behind a coffee bar, they made me reevaluate this green tea powder and actually made me absolutely love it! Yes, I am on the matcha lattes wagon and feel no shame in it!
So if you are a matcha lover or you are trying to reevaluate this drink, and you are after a healthy drink that is not boring AF, this spirulina matcha latte has your name written all over it!

What is a spirulina matcha latte?
A spirulina matcha latte is a refreshing drink made with matcha, milk, sweetener and a fluffy cold foam made with blue spirulina. It’s so simple and quick to make and you will get all the benefits of blue spirulina and matcha in a cup. And should we also talk about the beautiful colours, yes it’s an Insta-worthy drink with functionality!
And don’t expect to find a healthy drink that doesn’t taste good, because the mix of earthy and grassy flavour of matcha and maple syrup, combined so well with the more tame flavour of spirulina, for an energising alternative to your usual iced matcha latte.
While both mstcha and spirulina are considered superfoods, making this drink perfect to boost nutrients and energy with no crash, they are not the same, so let’s see what the difference is.
What is blue spirulina? Is it good for you?
Blue spirulina is the phycocyanin pigment extracted from the spirulina algae. This superfood is known for its blue colour, milder flavour and for dissolving easily compared to green spirulina, and is also rich in antioxidants. Green spirulina, which comes from the same algae, is the more protein-rich of the two and contains both chlorophyll and phycocyanin, which gives it its green hue.

Matcha is a type of green tea made by gridning young green tea leaves into a fine powder. This powder is then traditionally served with hot water, but its also widely used even mixed with milk like in this spirulina matcha latte.
Matcha, of course, is grown slightly differently from your average green tea. While both come from the same plant, matcha’s plants are covered 20-30 days before they are harvested. This is to avoid direct sunlight shining on the plants and increase the production of chlorophyll, boost the amino acid content and give the plant that strong green colour we all recognise so easily.
First off, matcha is full of antioxidants. Like, packed to the brim with antioxidants, which may reduce cell damage and prevent chronic disease. At the same time, matcha may help protect the liver and boost your brain function. But also, some of the compounds matcha contains are linked to cancer prevention and heart health. But because of the high caffeine content, you should also make sure you only consume it in moderation! The same goes for consuming these matcha mochi muffins.

What ingredients do I need for this spirulina matcha latte recipe?
To make this blue matcha latte you will need:
- matcha powder: gives the latte its earthy flavor and green colour, as well as adding a caffeine boost;
- hot water: helps dissolve the green tea powder and release its aroma;
- milk of choice: creates the base of the drink and helps balance the matcha;
- maple syrup: add a hint of sweetness;
- ice: keeps the drink chilled;
- blue spirulina powder: provides the colour to the cold foam as well as its antioxidant benefits;
- heavy whipping cream: adds richness and creates the fluffy texture of the foam;
- milk: lightens the cream and helps achieve the airy spoonable texture.
Can I swap any ingredients in this spirulina iced matcha drink?
You can indeed swap a few ingredients in here! The maple syrup can be substituted for anything like agave or even a simple syrup, or you can omit it all the way if you prefer. The milk and whipping cream can be dairy-free and plant-based based so that you can have an easy vegan drink.
Matcha powder and blue spirulina powder are at the base of the drink, so it’s hard to swap them. But if you want, you could try a different cold foam by using the same recipe (we haven’t tried it though, so we can’t exactly assure you the result).

How do I make the blue spirulina matcha latte?
This iced matcha latte is honestly so easy to make, and in less than 5 minutes, you will have a gorgeous and functional drink to sip on!
Start by sifting your matcha powder into a bowl. Then pour half of the hot water (80℃ and yes temperature is important as matcha powder can get ruined and bitter pretty easily if water is too hot) and whisk with your chasen or frother until smooth. Then add the rest of the water and whisk again until lightly frothy and set aside.
To prepare your spirulina cold foam, you add to a bowl the blue spirulina powder, heavy whipping cream and milk. With a milk frother, whip it up until thick and spoonable like consistency. Adjust the thickness if its too stiff by adding a touch of milk.
When everything is ready, get your glass and pour the matcha in. Then add the maple syrup and stir. Add the ice on top and then top up with the milk of your choice. Spoon the spirulina cold foam on top and serve straight away. Enjoy your spirulina matcha latte!
Can I make this spirulina matcha latte dairy-free?
Absolutely! The biggest thing about this easy spirulina drink recipe is that you can use any milk of your choice, whether you love soy milk, cashew milk, regular milk or any other kind. You can easily make this vegan by using plant-based whipping cream.

Easy Spirulina Matcha Latte Recipe
Ingredients
Matcha base
- 3 g matcha powder
- 80 g hot water 80℃
Blue spirulina cold foam
- 3 g blue spirulina powder
- 60 g heavy whipping cream
- 1 ½ tbsp milk of choice
Rest of the spriulina matcha latte
- 200 ml milk of choice
- ½ tsp maple syrup
- ice
Instructions
For the matcha
- Sift the matcha powder into a matcha bowl.
- Pour in half of hot water on top (80-85℃) and whisk with a chasen or milk frother until its smooth. Then add the reaining water on top and whisk again until lightly frothy and set aside.
Blue spirulina cold foam
- Add the blue spirulina powder, heavy whipping cream, and milk to a small bowl or jar.
- Froth using a handheld milk frother until thick, airy, and spoonable (cold foam consistency). Adjust thickness if needed with a splash of milk.
Assembling the latte
- Pour the matcha in the glass.

- Add the maple syrup and stir.
- Add the ice on top and pour the milk of your choice on top.

- Spoon the blue spirulina cold foam on top and serve straight away!
