And spending money I don’t have on things I don’t need. Especially loads of pumpkin spice latte iced when fall comes around. So this year, having a very different situation work-wise in front of me, plus all the things we are no longer doing thanks to Covid, I had to take matters into my own hands and start working on making my favourite at home, by myself.

Even if you prefer dairy milk, it’s just a matter of taste at the end of the day. So yes, this pumpkin spice latte iced can be made vegan or savoured with normal milk, as long as you like it – it will be perfect.
Is a pumpkin spice latte with oat milk any good?
It tastes delicious to me. It’s like drinking fall and it’s such a cosy drink to have when walking around. Or to have while settling at home for a cosy night in during a cold day. If you need more sweetness on top, maple syrup works a treat! And if you feel like you need even more sweetened, why not add whipped cream?

Long story short, it’s easier to make syrup and keep using it for a couple of weeks instead of having to make it every day. The second reason to have homemade syrup is that I used to have it at Starbucks and found it bitter at times. As I said before, I tweaked it to my own taste. So before we get to our final for a pumpkin spice latte iced recipe, let’s check out how to make the syrup.
How do you make pumpkin spice syrup?
The syrup for this pumpkin spice latte with oat milk is completely vegan. It will take around two hours from start to finish, but it’s mostly because of cooling down time. Cooking time is only ten to fifteen minutes.
Ingredients:
- 237ml water
- 200g brown sugar
- 200g pumpkin puree (real pumpkin or canned pumpkin is fine)
- 1 tsp vanilla extract
- 2 tsp pumpkin spice mix
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/8 tsp ground cloves
- Place all the ingredients in a pot and mix well before turning on the heat. Everything needs to be combined, but don’t worry about the lumps just yet, they will melt with the heat.
- Turn on the heat to medium and let it turn to a boil, and keep whisking every so often.
- Once it reaches boiling point, let it cook for two minutes and turn it off.
- Place in a container and let it cool completely before storing it in the fridge. You can keep it for up to two weeks.
