Coconut water citrus popsicles are the right answer for this heatwave! I must admit that I love anything that contains citrus. Give me a juice, lemonade, cake or any kind of savoury things with it and I’ll eat it!

There is nothing better than a refreshing taste in your mouth and in this heat, I couldn’t say no to try my hand at popsicles, so that’s how this coconut water citrus popsicles recipe came about.

First of all, I must admit that you see me less and less sharing recipes over here. I have never been someone who loved cooking. Yes, I baked my occasional brownie, and I loved making a chocolate cake at home. I would cook lunch or dinner, but nothing fancy here!

Years of high school meant having lunch solo with my dog and we used to share broth and pasta in winter. A mug of milk and cereals, a salad when I felt healthy enough. I am not much of a cook. If you ask Fred and Simona, I relish cooking things I know. I can make mean teriyaki pork, miso soy aubergine chicken and jam cake. But I try to minimise the risks knowing how many dinners I messed up!

Though I do sometimes take risks with new recipes. But since the second lockdown, I have been losing any want to try and cook something new. I am all up for new dishes, but I leave it with them. I help and clean, but cooking and I are taking a break.

You will ask yourself, why this long thing about cooking. To be honest, I started looking for different recipes. Something that doesn’t involve much cooking and chances for me to mess it around. I love anything ice cream related, fresh and tasty and can’t get enough of coconut water. Therefore, these coconut water citrus popsicles were the right answer!

What is great about these coconut water citrus popsicles?

They are a powerhouse of citrus. And what comes with citrus fruits is vitamins, so you won’t have to run around getting the kids to have fruit for once. Or reminding yourself to get your vitamins. And I mean coconut water is too a drink full of goodies!

What popsicles moulds will I need?

After looking for the right popsicles mould – Simona and I spent quite some time getting one we both liked and didn’t break the bank. We actually found these mould on Amazon in silicone, so they can be reused. They are stackable – the equivalent of having pockets in a dress! But most importantly, they have some sticks, in case you need to cater for a larger audience.

What types of citrus do these coconut water citrus popsicles contain?

Oranges alone contain:

  • Vitamin C – important for the immune system;
  • Potassium;
  • Vitamin B1;
  • Folic Acid.

Lemons are too a great source of vitamins:

  • Vitamin C;
  • Potassium – can help lower blood pressure;
  • Vitamin B6.

Limes are honestly my favourites. I know that they are a hit or miss, not everyone loves them. But still, they are high in vitamins:

  • Magnesium;
  • Calcium;
  • Vitamin A, B, C, D;
  • Potassium.

Not to forget coconut water. A new found love from a couple of years ago. Coconut water too contains vitamins:

  • Potassium;
  • Magnesium;
  • Calcium;
  • Sodium;
  • Vitamin C.

Coconut water citrus popsicles

The best and freshest treat for summer! These lemon lime & orange popsicles are a powerhouse of citrus and vitamins.

Ingredients
  

  • 150 ml orange juice 1 medium orange
  • 75 ml of lime juice 2 small limes
  • 75 ml lemon juice 1 medium lemon
  • 200 ml coconut water
  • 2 tbsp honey
  • 1 orange decoration – optional
  • 1 lemon decoration – optional
  • 1 lime decoration – optional

Instructions
 

  • Slice in half all of your fruits and squeeze them in a lemon/orange juicer. Keep all the juice in a measuring jug.
  • Sift all the juice, make sure there are no bits or seeds as they could make the popsicle bitter.
  • Add the honey and coconut water and mix well.
  • Add the liquid to your popsicles moulds.
  • Slice the additional fruit for decorations and add them to your popsicles mould. (optional).
  • Freeze for 8 hours or overnight.

Notes

The decorations inside are totally optional, but we thought it gave a great touch to it.
Freezing time depends on the freezer, but we recommend at least 8 hours to make sure everything is set. Even better if left to rest overnight.
You can store the popsicles for a couple of months in the freezer.
I like to have texture so I added the sliced fruit inside, but it’s totally optional.

Something I truly loved about making these coconut water citrus popsicles, is how quick they were! I love that this recipe is a powerhouse of my favourite fruits but still has a sweet side with coconut water and honey.

Can I substitute anything in this popsicle recipe?

You can easily use sugar instead of honey, or agave. It might just need a tweak on the quantities. If you prefer more of one fruit or the other, go for it! I wasn’t that sure about coconut water, first.

Simona was very enthusiastic about it, as she thought that only the juice would be too sour. I could have easily had it straight as it was, but I also love to snack on limes, so maybe I am not the right example. They actually did work out well!

Also, they would work like a treat for adults with a shot of your favourite drink. I think vodka, tequila or gin would work nicely with the citrus for sure!

I am quite sure I am not the only one that snacks on citruses. Our mom used to have lemon and sugar when she was pregnant, so it might be that. Or that we always had oranges at home. They always bring me back to the hot summer days spent in Sicily.

Our grandfather used to be a fruit picker and always brought a ton of fruit home. And you know, an orange in the middle of a hazy summer afternoon slump was the best pick me up! With a side of lollipops, before heading out to play.

This coconut water citrus popsicles recipe was so easy to make and even faster to eat! They are the perfect end to a summer BBQ or afternoon snack under the sun.

  1. Those sound so wonderful and refreshing. I used to have a set of popsicle molds, but I never used it and donated it to a charity auction at my last job. This makes me want to get another one.

    I totally get wanting to take a break from cooking. I love cooking, but there are definitely times when it can feel like a chore.

  15. This popsicle recipe seems really great right up until the coconut water part. I’ve never liked the smell or taste of coconut. Does coconut water taste of coconut at all? What could you substitute coconut water for so you could still make the popsicles? I’m guessing water would be ok?
