I have never been to Greece yet, but it’s one of those countries I’d like to visit sooner rather than later. And if the food is anything as similar as these chicken pitas we’ve made, then I guess the sooner will become super soon: deliciously spicy and fresh at the same time, what the Greeks call gyros are my new addiction.

Okay, this Greek chicken pita or chicken gyro might not be the most traditional of gyros since they are not grilled chicken pitas, of course, but they are delicious nonetheless. And if I tell you the chicken pitas we made are also extremely easy to put together, all doubts should fly out the window: I promise you will never taste anything as delicious as these.

You might have noticed we don’t do many savory recipes, and that’s because we’re very confident with baking. But this year, we’re planning on doing so, so much more with all we can come up with in the savory department, and these are just the starting point. We love cooking, and we love cooking all the things, so why only focus on what makes our comfort zone?

Let these Greek chicken pitas be the one dish you try before the end of this week. Just know that, if you are vegetarian or vegan, the chicken can be replaced easily with either tofu chunks or seitan chunks. We know because our sister Fred is vegan now and we have made it with seitan chunks and she absolutely loved it.

Of course, a good chicken gyros comes with all the trimmings and such, so we have also made some beautiful tzatziki with plain Greek yogurt, once again somehow un-traditional, and added the fresh tomatoes, onions, and salad. Delicious, quick, and easy to make: my kind of lunch – or dinner – whenever I can!

We skipped this step, but don’t make the same mistake.

Now there are a few different ways you could tackle this recipe, of course, we went for the easiest and quickest with no time to marinate chicken. But it’s fair to say you could create the chicken marinade using the ingredients above. And when it comes to the cooking, you have three different ways:

  • in a simple pan, just like we did. Just tossed everything in with the chicken, waited for it to be cooked, and enjoyed it thoroughly;
  • In the oven, place your marinated chicken on a sheet pan, which makes it the perfect way to meal prep, correct?;
  • Grilling your chicken on a grill pan after marinating it makes it more authentic, the real deal grilled chicken pita.

Ingredients
  

For the pitas

  • 2 Greek pitas
  • 450 g chicken breast cut in strips
  • 2 tbsp brown sugar
  • 1 ½ tsp sweet paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp black pepper
  • ½ tsp oregano
  • ½ tsp salt
  • 1 tbsp extra virgin olive oil
  • ½ lemon
  • 1 small red onion sliced thinly
  • handful cherry tomatoes sliced thinly
  • salad mix chopped finely

For the tzatziki

  • ½ large cucumber
  • 1 cup Greek yoghurt
  • 2 garlic cloves
  • 1 tbsp fresh dill
  • 1 tbsp lemon juice
  • 1 tbsp extra virgin olive oil
  • ½ tsp white vinegar
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions
 

  • In a pan, add the extra virgin olive oil and heat it up.
  • Add the chicken breast strips and let them brown on each side.
  • Once the chicken is browned, add all the seasoning: brown sugar, paprika, garlic powder, onion powder, black pepper, oregano, salt and juice of half a lemon.
  • Toss around all the ingredients and let it cook on medium low until the chicken is ready.
  • In the meantime, prepare the tzatziki: chop the cucumber in small chunks and drain over some paper towels.
  • In a bowl, add the chopped cucumber, Greek yoghurt, crushed garlic cloves, chopped dill and combine.
  • Add the lemon juice, extra virgin olive oil and white vinegar, then season with salt and black pepper and set aside.
  • Prepare the trimmings for the chicken pitas: slice the red onion thinly, and do the same with the tomatoes and salad.
  • Once the chicken is ready, build your pita as you prefer: toast the pita bread slightly and fill it.
  • Serve immediately, piping hot, slathered in fresh tzatziki and packed with all the trimmings.
