In a world where everyone is raving about the new Barbie movie, I am ready to go watch it with one of these pineapple coconut margarita drinks on hand. Yes, it is not pink, I understand that, but can you even begin to imagine how delicious this cocktail really is? I would dare call it a dessert, even: deliciously creamy, sweet to the point you’ll be craving more and more and with plenty of coconut and pineapple tasting notes to last a lifetime.
There hasn’t been a day since we made this pineapple coconut margarita that I have stopped raving about it with Cristina. She seems of the idea that I just need to stop talking about it, while I am more down with having at least one of it every night. I can confirm, though, if you’re concerned, that I have not had any since, and that I keep dreaming about all the beautiful pineapple coconut margaritas in the world.
Think about it for a second: luscious coconut milk, acidic yet sweet pineapple juice, citrusy lime and a rim made with sugar and lime zest. Summery, tropical and most definitely Barbie-approved in my world. If not now, then when? But this coconut pineapple margarita is definitely ending in my top three without an inch of doubt. It’s creamy, sweet and doesn’t taste too alcoholic – which is usually a bad thing because you won’t realise you’re drunk until you’re fully drunk. Ouch. Be careful when drinking, of course.
What is a margarita and where is it from?

What ingredients do I need to make this pineapple coconut margarita?
This extremely tasty drink that is the pineapple coconut margarita only requires a few ingredients, so let’s see what they are.
For the actual drink, you will need pineapple juice, either fresh or boxed, canned coconut milk, fresh lime juice, tequila and agave syrup.
For the lime sugar rim, you will need the zest of 1 lime and 1 tbsp granulated sugar. Easy peasy.
How do I make this pineapple coconut margarita?
Because this coconut pineapple margarita recipe is a blended one, the recipe itself it’s as easy as pouring everything into the jug of a blender and blending til smooth. But let’s see the ins and outs of it.
In a small side plate, mix the granulated sugar and lime zest. Using a wedge of lime, wet the rim of your margarita glass, then proceed to cover the rim of the glass with the sugar and zest mix.
In the jug of your blender add the coconut milk, pineapple juice, lime juice, tequila, agave nectar and a handful of ice cubes and blend until smooth. Pour it into the rimmed glass and serve immediately.
You can add a lime wedge and a chunk of pineapple for garnish if you’re feeling fancy. Otherwise, toasted coconut flakes are also perfect scattered on top.

Ingredients
- For the drink
- 60 ml pineapple juice
- 30 ml canned coconut milk
- 60 ml tequila
- 2 tbsp agave syrup
- 1 lime juiced
- For the lime sugar rim
- zest of 1 lime
- 1 tbsp granulated sugar
Instructions
- In a small side plate, mix the granulated sugar and lime zest.
- Using a wedge of lime, wet the rim of your margarita glass, then proceed to cover the rim of the glass with the sugar and zest mix. Set aside.
- In the jug of your blender add the coconut milk, pineapple juice, lime juice, tequila, agave syrup and a handful of ice cubes and blend until smooth.
