Pumpkin Pie Spice Pancakes, also known as the 3 Ps no one needed in their life. Or not. You need to try them before you judge them, but we have enjoyed them a lot so we are almost sure you will too.

As you may have gathered, I am obsessed with pumpkin spice everything, whether in food or drinks. And having had the chance to be in New York last year around September. I would not recommend it unless you want to raid all the Targets and Trader Joe’s on your radar. Everything was just perfect, the food, the decorations, the everything-is-pumpkin-tasting and I was just there for it.

So yesterday, in honour of a little tradition the girls and I share, and to celebrate fall, we have gone full-on Pumpkin galore. From Pumpkin Spice Iced Latte to pumpkin ganache pie, pumpkin gnocchi and all the autumnal recipes.

And we couldn’t miss something for breakfast too. Or a snack, you do you. Anyway, something that involves pumpkins but takes far less than making a whole delicious pie, not that there’s anything wrong with it. So from the love of pumpkins and pancakes, these delicious pumpkin pancakes came to life! Can you blame anyone for rolling out of bed at the smell of pancakes pumpkin spice? I bet not!

What are pumpkins and are they good for you?

Pumpkins are fruits. They are a type of winter squash that belongs to the Cucurbitaceae family. Contrary to common belief, pumpkins are not vegetables as it contains seeds and they are the product of a seed-bearing plant. Pumpkins are a type of berry known as Pepo, that originates in Mexico and the USA. One of the oldest domesticated plants.

You can find plenty of different pumpkins around and they are widely used around the world for food consumption. Pumpkins are not only widely used as food, but also for their aesthetics, for decorations, for carving and in medicine. So Everything of the pumpkin can be used, from the leaves to pulp, to skin and seeds. You can make easy snacks out of seeds and the skin and pulp can get roasted.

But are they good for you? Long story short, yes they are! For instance, pumpkins are:

  • rich in vitamins A, C, E,
  • highly nutritious and high in minerals,
  • high in antioxidants,
  • rich in iron and folate,
  • high in potassium and a great source of fiber,
  • helps with healthy skin, can lower the risk of cancer and chronic diseases, boost your immunity system and help with your heart health.

What is pumpkin spice?

Pumpkin spice or even known as pumpkin pie spice is a mix of spices commonly used during the fall and holiday seasons. This mix is more well known in the States but has now taken space everywhere around the world. In a classic pumpkin spice mix, you will find cinnamon, ginger, cloves, nutmeg and allspice.

Can you make your own pumpkin spice?

Absolutely! It’s so easy to make your own homemade pumpkin spice mix. As most ingredients are pantry items or easy to find at any supermarket, it will take you less than ten minutes. But, if you feel like buying it instead, it’s easy to find at any supermarket nowadays. An easy way to do is mix: 3 tablespoons of cinnamon, 2 teaspoons of ground ginger, 2 teaspoons of nutmeg, 1 1/2 teaspoons of allspice and 1 1/2 teaspoons of cloves. And you can keep that in a spice jar for all of your pumpkin spice recipes.

Are these pumpkin pie spice pancakes easy to make?

This recipe is so so easy to make and so quick! These pumpkin pie spice pancakes will become easily one of your breakfast favourites. Or a great choice of food for a cozy night in. Or an easy quick snack in the afternoon. These pancakes take less than fifteen minutes, so not much prep to do, which is a win-win. And they are foolproof too, as I I like recipes to be!

What ingredients do I need for these pumpkin pie spice pancakes?

All you will need are pantry items. From flour and eggs to pumpkin spice and sugar, as well as milk, vanilla and baking powder. A cup of pumpkin puree is also needed, which you can make yourself from a pumpkin. You will just need to boil it and then mash it. Or you can find canned pumpkins at the supermarket in the baking aisle. Or you can buy them online in case you can’t find them, but with the season approaching, pumpkins will be all over supermarkets.

Can I substitute anything in this pancake recipe?

You sure can! What is easier to substitute is milk and purpose flour. Whether it’s your favourite non-dairy milk or your favourite kind of flour. Or instead of white sugar, you could use brown sugar. You could swap baking powder for baking soda in case you don’t have any (1/3 of a teaspoon baking soda for 1 teaspoon baking powder). Eggs can also be swapped for an egg replacement or a mashed banana. You might need to tweak something for it in case you use an egg replacement.

What do these pumpkin spice pie pancakes taste like?

They are delicious and a taste of fall in your mouth! They taste like warmth, spices, family gatherings and all of that sort of stuff. Imagine a cold day with a hot drink and a good book. Cristina wasn’t a fan of the pumpkin spice mix flavor at first, but she thought these were great! We totally converted to the pumpkin galore fest we have in the house!

How do you make the pumpkin pancake batter?

It’s as easy as you can think of! Just add the dry ingredients to a large bowl and add the pumpkin spice and mix well until combined. In a separate bowl add the wet ingredients with the pumpkin puree. Now add the wet ingredients to the dry ingredients and mix until you have no lumps in sight. Get ready a hot pan and get ready to cook these pancakes in no time!

Ingredients
  

  • 1 cup flour
  • 1 cup milk
  • 1 egg
  • ¼ cup sugar
  • ¾ cup pumpkin puree
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp pumpkin pie spice mix

Instructions
 

  • Mix the flour, sugar, baking powder, and pumpkin pie spice mix in a large bowl.
  • In a separate smaller bowl, mix the milk, egg, pumpkin puree, and vanilla extract until everything is combined.
  • Add the wet ingredients to the bowl with the dry ingredients and mix well until combined, with no lumps.
  • Warm-up your pan and add a tad bit of butter, unless you have a non-stick pan or griddle, then start cooking the pancakes and flip once the top side starts bubbling.
  • Once ready, serve with your choice of topping, we have gone for Maple Syrup and…Nutella! Worked amazingly.

Can I swap pumpkin puree for canned pumpkin?

There is no problem in substituting one for the other. Whether it’s a cup of pumpkin puree or canned pumpkin, you will manage to still get a great pancake batter mix to cook and enjoy! Making it yourself is a bit more laborious, but I can assure you that it is all worth it. And it’s also a great way to eat far more pumpkin as you can use the skin and seeds to make more snacks. Like roasted pumpkin seeds.

What can you use as toppings on these pumpkin pie spice pancakes?

You can use anything that you can think of! We went for Nutella and maple syrup. But you could try with butter, or if you feel fancy enough a flavoured butter. Or add some chopped pecans or whipped cream. Fruit, berries, jams and curds. Chocolate chips would work a treat, either inside or just sprinkled on top and peanut butter too. And if you feel like your pumpkin dose of the day is not enough, a pumpkin spice iced latte can’t be missed on the side! Just the right thing for your caffeine kick in the morning too.

Can I freeze these pancakes?

Long story short, you can indeed! If like us, you love to have a lazy breakfast, you can make these in large batches. You can keep them in the freezer for up to two weeks and then make the again. All you have to do is place them in the oven at 180°C for 5-10 minutes. And they will be ready to be enjoyed as much as you have just made them minutes before! Pack them in your lunch box for a sweet treat or have them even in the afternoon, as easy as it comes!
