Halloween is not such a big thing here in Italy, but that doesn’t stop us from celebrating anyway and making some delicious food. This mummy pot pie is so easy and delicious, like a classic chicken pot pie dinner with a double crust and the perfect Halloween party main dish!

We have plenty of Halloween food ideas, from appetizers to main dishes, Halloween pies and cocktails, and this only made the day extra special! Imagine a flaky crust, with a delicious creamy filling and a mummy waiting for you at the table! It will be a hit with both adults and kids alike and you can even make single-serve ones with the same recipe. Talk about being versatile!

What is a double-crust pot pie?

Pot pies are usually known for having a much creamier filling, often mixed with cream, chicken broth or gravy. And have a combo of meat, often shredded or cubed, and vegetables. Pot pies are traditionally made with only a crust on top, but there are plenty of variations with a double crust, like this mummy pot pie.

What’s the difference between a pot pie and a meat pie?

A meat pie usually has a thicker filling that is mostly made of meat and less vegetables. A pot pie on the other hand has a creamier filling and a good mix of meat and vegetables inside and is usually served in individual pie pots. Usually, meat pies have both a crust on top and at the bottom, while for a classic pot pie, the crust is only on top.

What ingredients do I need for this Halloween mummy pot pie?

This delicious double-crust Halloween pot pie requires easy ingredients and things you can easily find at the supermarket or already in your pantry and fridge:

  • double shortcrust pastry: You can get store-bought one like the recipe calls, or make it yourself. We have a delicious pie dough recipe that works wonders on this apple pie post.
  • onion: You will need an onion to start your pot pie filling, you will use it to bring flavour before you start browning your meat.
  • garlic cloves
  • carrot: You will add carrot to make your starting soffritto to then brown and give flavour to your chicken.
  • chicken breast: You will dice your chicken breast to add to your filling. You can also cut it into small strips or chunks.
  • frozen peas: Peas will add a new texture to your Halloween mummy pie and will be added just before you add the mushrooms and chicken.
  • sliced button mushrooms: They will not only add flavour but also a new texture to your filling and will pair well with cream and chicken.
  • fresh cream: This will help with keeping your filling extra creamy and help with avoiding any dry chicken breast.
  • extra virgin olive oil
  • salt & chilli flakes: Add them to taste, as everyone has a different way of eating, so we left that up to you. We love a good spicy kick, mostly when we use cream.
  • milk: You will need just enough milk to brush the top of your pot pie, otherwise you can make an egg wash. You can use whatever milk you fancy.
  • hard-boiled eggs: Eggs will be used to make the spooky eyes, more precisely the sclera (white part of the eye). The remnants can either be eaten as is, or you could make some spooky deviled eggs for starters.
  • black olives: You will need black olives to create the spooky eyes for your Halloween pot pie. All you will need to do is slice the ends of them and pop them in the white part of the egg.

Can I substitute any ingredients in this Halloween mummy pot pie recipe?

As with most recipes, you can find replacements for almost all your ingredients.

  • double shortcrust pastry: As mentioned before in the post, classic pot pie comes with just a crust on top, but we love having a double crust to make sure you can keep a slice shape when you serve. And honestly, it’s an add-on to the plate, am I right? You can go for a simple crust all together! You can also use a different pie crust or a prebaked shop brought one.
  • chicken breast: You can use any kind of meat you prefer. This could work well with small beef chunks or pork. May I add that even pulled pork would make this an absolute win and added surprise for your Halloween main dish! You can use frozen chicken or pre cooked chicken like a rotisserie one and shred it.
  • onion, carrot & garlic: Some of the ingredients for a classic soffritto. You can add celery too, but I am not the biggest fan of it, so I avoid adding it. You can use red onions or even leeks to add a different flavour and also add an element that can resemble something spooky like skin.
  • frozen peas & mushrooms: You can substitute them for any other kind of vegetable. Fine beans could work very well with a chicken pot pie or even adding some chunks of peppers. Or add some cubed potatoes and even asparagus if in season. Or just use a different kind of them like cremini mushrooms.
  • fresh cream: This will a liquid to all your ingredients that really binds all flavour together. You can go for a different kind, like dairy free cream, a mix of milk and butter or cottage cheese.
  • eggs and olives: If you prefer avoiding using eggs and olives, just use some fantasy to make your spooky eyes. Anything like a turnip, parsnip or even a mushroom can have a circle cut out of it and used as the sclera. You can go for a round bit of beetroot or carrot to make your pupil. Or use something lime mozzarella or white cheese for the eyes. Some recipes call for adding candy eyes, but I thought it would be better for everything to savoury.

How to make a Halloween chicken pot pie

In a pan over medium heat, warm up a drizzle of extra virgin olive oil and add the onion. Cook them for 3-4 minutes, or until they start to feel tender, then add the garlic and let it cook for a minute or two. Then add the carrot, and cook them until tender for a few minutes.

Add the frozen peas to the mix and let it cook until soft. Afterwards, add the sliced mushroom and let the mix cook until the mushrooms are almost done.

Dice the chicken breast and add it to the pan. Let it brown and then add the cream and mix in well. Salt accordingly, add chilli flakes to taste, and combine. Let your pie filling cook for an additional ten minutes and then set aside. Preheat your oven to 180C.

Now prepare your pie dish. Unroll one of the shortcrust pastry and place it on the bottom of the dish, then pour the chicken cream mix into it.

Unroll the second shortcrust pastry and cut uneven lenght and width strips, then start placing them in a random fashion, leaving gaps for the eyes. Pour some milk into a bowl, then brush the pastry and bake for 25-30 minutes to 180C or until golden brown.

First, cook and peel the eggs. Next, trim both ends of each egg. Using either a straw or a knife, create a circular opening on each end. Then, slice the olives.

Finally, position the olive slices within the egg’s circular openings to craft eerie eyeballs. Place your egg eyeballs on your pie when it’s cool, serve and enjoy a spooky Halloween pot pies!

How can I store my chicken pot pie?

If you still have some leftovers after your Halloween party, you can keep your pot pie in the fridge for up to three days and then reheat in the microwave or in the oven when you are ready to serve it. Or you could also freeze it for later use.

Can I freeze the Halloween mummy pot pie?

This double crust Halloween pot pie is perfect to make in advance and freeze. All you want to do is prepare your pie and instead of baking it straight away, you will cover it with foil and then place it in a freezer-safe bag, label it and freeze it for up to two months. Just count an additional 30-40 minutes of bake time if baking it from frozen.

You could also freeze your leftovers when they are cool. Just wrap them in foil and then put them into a freezer-safe bag or container for storage. Although, when reheating, in this case the crust won’t be as good in texture as baking it the first time.

Can I make individual mummy pot pies instead of a full one?

This Halloween pot pie recipe works wonders even as individual mini pot pies. If you have some small ramekins or mini cocotte, they would make an amazing addition to your halloween spread and even easier to make sure everyone can have some!

All you have to do is cut the pastry to size and divide the filling between all pot pies in ramekins. Cover them with the same pastry strips and bake as usual!

What can I serve this Halloween pot pie with?

This Halloween pot pie is already filled with the goodies and will make a delicious cary main dish for your halloween party, but sides are needed! What can you serve with it:

  • Roasted Vegetables: I know, I know, vegetables again? Hear me out, you could use something different from your filling and make some butternut squash spooky ghosts, or make some bloody Brussel sprouts or even some pumpkin-shaped sweet potatoes. The scary world is your oyster!
  • Mashed Potatoes: You can’t honestly ever go wrong with mashed potatoes, it’s a classic and a must! A dollop of it on the side of your pie or maybe use a cookie cutter to make a shape, or add even some bloody gravy on top for added flair.
  • Scary Salad: Use those cookie cutters and get cooking. Salad is a healthier and lighter choice as a side to your pie. Add some cut-out bell peppers, cheese ghosts, jack-o-lantern cucumbers or even some skull-shaped mozzarella.
  • Deviled Eggs: Make good use of the hard-boiled eggs and make some spider web deviled eggs, they would make a spooky entree!
  • Soup: Use your fantasy and use the natural colour of food to help you out and make a spooky soup to add on the side of your pie.
  • Mummy Jalapeño Poppers: these would make such a cute add-on to your pie and they are so so easy to make!
  • Hot Dog Mummies: Easy to make and even easier to devour! These would make a delicious side for your pot pie and would be a hit with kids and adults alike.

Most Delicious Halloween Mummy Pot Pie

Ingredients
  

Halloween Pot Pie: 

  • 2 rolls of shortcrust pastry
  • 1 small onion
  • 2 garlic cloves
  • 1 carrot
  • 500 g chicken breast
  • 150 g frozen peas
  • 300 g sliced button mushrooms
  • 200 ml fresh cream
  • extra virgin olive oil
  • salt
  • Milk

Spooky Eyeballs:

  • 2 hard-boiled eggs
  • 3 black olives

Instructions
 

  • In a pan, warm up a drizzle of extra virgin olive oil and add the onion.
  • Cook for 3-4 minutes, or until it starts to feel tender, then add the garlic and let it cook for a minute or two.
  • Add the carrot and again, cook it for a few minutes until tender.
  • Add the frozen peas and cook until soft, then add the sliced mushrooms and cook until they are almost fully cooked.
  • Dice the chicken breast and let it brown in the pan, then add the cream and mix in well. Salt accordingly and combine.
  • Let your pie filling cook for an additional ten minutes and then set aside. 
  • Preheat your oven to 180C.
  • Prepare your pie dish: unroll the first shortcrust pastry and place it on the bottom of the dish, then pour the chicken cream mix into it.
  • Unroll the second shortcrust pastry and cut uneven strips, then start placing them in a random fashion, leaving gaps for the eyes.
  • Pour some milk into a bowl, then brush the pastry and bake for 25-30 minutes at 180C or until golden.
  • First, cook and peel the eggs. Next, trim both ends of each egg. Using either a straw or a knife, create a circular opening on each end. Then, slice the olives. Finally, position the olive slices within the egg’s circular openings to craft eerie eyeballs.
  • Place your egg eyeballs on your pie when it’s cool, serve and enjoy a spooky Halloween pot pie!
