You know it guys, I have a soft spot for fruit pie recipes, I even have a full guide on them. And for this festive season, I wanted to come up with my own recipe. Christmas is around the corner, so I thought why not try to come up with a pie recipe for it? A recipe that includes seasonal fruits, but also makes you feel at home when biting into it. Basically, it’s a pie that tastes like Christmas. So I came up with this Bourbon and mixed berries pie.
Let me tell you, I wasn’t so sure about it at first. I had never cooked with Bourbon and I normally follow a recipe or twist a recipe that’s already there. So this was completely new territory for me, and kind of thrilling too, at that. I mean, I followed the basic rules and tips I gave you guys before, but I spiced up the filling to what I knew would be super tasty. So that’s how this Bourbon & mixed berries pie was born!

How do we make this pie crust for the mixed berries pie?
First of all, how did I make the crust? I used my usual recipe from Four & Twenty Blackbirds, but, because we were at home in Italy and our parents have an enormous freezer, I chilled the base a second time in the freezer. It was done the day before, so I had plenty of time to work on it. I also prepared the weaving of the top straight away after chilling it the first time and had it ready to go on top once out of the freezer. Honestly having a spacious freezer space is perfect for pie-making.
The ingredients you will need for a double pie crust are:
- 2 and 1/2 cups of all purpose flour
- 1 teaspoon of salt or kosher salt
- 1 tablespoon of white granulated or caster sugar
- ½ pound or 230g of cold unsalted butter, cut into pieces
- 1 glass of cold filtered water
- ¼ of a cup of cider vinegar
- 1 cup of ice
The process for making the double pie crust is as below:
- In a large bowl, stir the flour, salt, and sugar together;
- Add the butter pieces and mix well;
- Combine the water, cider vinegar, and ice in a small bowl. Sprinkle 2 tablespoons of the ice water mixture over the flour, and mix until fully incorporated;
- Add more ice water, only 1 or 2 tablespoons at a time, mixing gently until the dough comes together in a ball – you will not need all of the iced water you have prepared – leaving some dry bits.
- Squeeze and pinch with your fingertips to bring the mixture together and combine.
- Shape the dough into 2 flat discs, wrap them in cling film, and refrigerate for at least an hour, preferably overnight.

- Brown Sugar
- Function: Brown sugar sweetens the filling while adding depth and a hint of molasses, creating a warm, caramel-like undertone that complements the berries and bourbon;

- Caster Sugar

- Tip: If preferred, substitute bourbon with a non-alcoholic vanilla extract or orange juice for a similar hint of flavor without the spirits.
- Cornflour or Cornstarch
- Function: Cornflour acts as a thickening agent, helping the berry juices set into a luscious, gel-like filling that holds its shape when sliced;
- Characteristics: When cooked, it’s neutral in flavor and works to prevent a runny pie by stabilizing the moisture from the berries and sugars;
- Tip: Mix cornflour with a bit of cold water before adding it to the filling to prevent clumping and ensure even distribution.
Each of these ingredients plays an essential role in creating a Bourbon mixed berries pie that’s layered with flavor and texture. The combination of sweet and tart berries, the warm, aromatic spices, the zesty brightness from the orange, and the subtle, rich kick of bourbon all come together in a perfectly flaky crust. How do I make this Bourbon mixed berries pie?
For the filling, I did some research first. I used my faithful Flavour Thesaurus, and also Google around on the best alcohol-based drinks for fruit cakes.
Berries were always my choice. I know I know, I cannot eat them, but the girls love them. And Christmas is all about those raspberries and blueberries and warm jams. So that was an easy choice. The easiest for this mixed berries pie. I then chose to add a little bit of orange zest. You see, orange, for how much citrus, is still very sweet and its zest is too. And it works like magic when added to very pungent and acidic fruits. Let’s see how to make it together.
Take the first half of the pie crust out of the fridge and place it on a lightly floured surface. Roll it out to about 1/8-inch thickness, ensuring it’s large enough to cover the base and sides of your pie dish. Gently lay the rolled dough into the dish, pressing it into the edges. Trim any excess and place the dish back in the fridge to chill.
In a large bowl, combine the mixed berries, cinnamon, cardamom, nutmeg, brown sugar, caster sugar, orange zest, and cornflour. Mix thoroughly until all the ingredients are evenly coated. Pour in the Bourbon and stir well, breaking up any lumps to ensure the mixture is smooth and consistent. Let the filling rest for up to 1 hour to allow the flavors to meld.
Set your oven to 180°C and allow it to preheat while you finish preparing the pie. Take the second half of the pie crust from the fridge and roll it out on a floured surface. Create your desired decorations or lattice pattern, taking care not to overwork the dough. If it becomes too soft, chill it briefly before continuing.
Spoon the berry filling into the prepared pie base, spreading it evenly. Carefully arrange your decorative top crust over the filling, sealing the edges as needed. Place the pie in the preheated oven and bake for 25-30 minutes, or until the filling is bubbling and the crust is a deep golden brown. Let the pie cool slightly before serving to ensure the filling sets properly. Enjoy your delicious Bourbon Mixed Berries Pie!

Bourbon & Mixed Berries Pie
Ingredients
- 1 double crust dose
- 400 g mixed berries you can use either frozen mix or make your own mix as well!
- 100 g light brown sugar
- 60 g white caster sugar
- ½ tsp cinnamon
- ½ tsp cardamom
- ½ tsp nutmeg
- 1 orange zest
- 50 ml Bourbon or to taste
- 1 tbsp cornflour
Instructions
- Take the first half of the pie crust out of the fridge and place it on a lightly floured surface.1 double crust dose

Tips and annotations on this mixed berry pie
As always, there is a way to make this delicious mixed berries pie Vegan:
- Butter: as the vegan industry becomes more and more trendy and popular, you can easily swap your butter for a good butter replacement or margarine. I would recommend anything that has a high fat content to get the same stretchiness;
- Resting time: vegan dough may need a little longer resting time in the fridge. If you are feeling it, you won’t have any issues!
In terms of any other tips, here are some mistakes I have made with this pie:
- Flour: do not use Manitoba, only use 00 or any standard plain flour. I used Manitoba, as it’s popular in Italy, and I had to redo the dough. Manitoba flour is high in gluten, which means the dough becomes extremely stretchy. The pie crust will shrink in during cooking and well, all the juices will come out;
- Fruits: I have used frozen berries for this pie rather than fresh. I did that to preserve the shape of the fruits but also to have some bits inside the pie. You can also get a bigger variety that may not be seasonal or simply not available in your country;
- I didn’t use lemon juice. Lemons are very acidic and the berries themselves had enough acidity, and I didn’t want the pie to be overwhelming. You can add a little bit of the orange juice from the one you use for the zest, but you may end up having to increase your cornflour to avoid having a very liquid filling;
- Crust: try not to leave the crust at room temperature for too long, or you will have to rest it for at least half an hour again. The same goes for overworking it! Careful not to do this while cutting your decorations, you may end up with a shrunk product;
- Alcohol: you can choose any other liquor that you think may suit the fruits. I used Bourbon, as I said above, for its sweetness and body, but you can choose anything you prefer. However, you need to remember you just want something that complements the fruits not overpower them.
Let me say, this mixed berries pie didn’t last long.
This mixed berry pie was a very tasty pie that we will make again and perhaps with different variations. Even my mum, who normally is not big on alcoholic desserts, has devoured this mixed berries pie.
