4 Ingredient Chai Cocktail, Delicious & Easy

There is one thing everyone will be doing this Christmas and it’s drinking, whether you’re up for a mocktail or a cocktail, and you know we have plenty of these. But to make it even more special, we asked a good friend of ours to create a tea cocktail for us, and he created this chai cocktail which will have you head over heels.
The good friend in question is Dan O’Regan, founder of Concept Coffee UK, runner-up at the UK Barista Championship of 2018, and founder of the beautiful BANK restaurant in Bristol.
Fred crossed paths with Dan when they were both working at Origin Coffee Roasters and we have had the chance to chat with him while in lockdown about all the things we were planning for this blog and he was supportive and helpful throughout. This is never really something you can expect from anyone when you say this is your full-time job, because everyone seems to think this isn’t even a hobby.
If you have never been on his personal Instagram feed, you are most definitely missing out. Dan has been smashing in the cocktail category all the way through lockdowns 1 & 2 and he’s kindly sent us one of his recipes for you all to try, and this chai cocktail is a testament to how brilliant he is. But let’s start from the beginning, here: the three of us are not major drinkers UNTIL you put a cocktail under our noses. It’s impossible for us to say no to a cocktail, and there are far too many times when we get drunk on drinking cocktails only.
Maybe the sugary addition to some of our favorites, maybe the fanciness of the glasses, we have always enjoyed a good Espresso Martini without an inch of doubt. And don’t even get me started on fruity cocktails, that will be the death of me. This masala chai beverage is a staple of Indian culture and is beloved for its rich, aromatic flavor, creamy texture, and comforting warmth.
The preparation of chai tea involves a harmonious combination of several key ingredients. At its core, chai is made using a base of strong black tea, typically varieties such as Assam or Darjeeling. These teas provide a bold and robust flavor that forms the perfect canvas for the complex spice blend. The spices used in chai are the heart of the beverage and often include cardamom, cinnamon, cloves, ginger, and black pepper. Some recipes may also incorporate additional flavors like nutmeg, fennel seeds, or star anise for added depth and aroma.
The liquid base traditionally consists of whole milk, which gives the tea its creamy consistency, though modern versions frequently use alternatives such as almond milk, soy milk, or oat milk to suit dietary preferences. It is now a prominent feature in coffee shops and tea houses, enjoyed by people of all cultures as a cozy and flavorful treat.
What ingredients do I need to make this chai cocktail?

- Lime Juice: Lime juice introduces a bright, zesty element to the cocktail, cutting through the richness of the milk and the syrup. How do I make the chai syrup for these chai cocktails?
Making chai syrup for your chai tea cocktail is an easy process that involves steeping traditional chai spices and tea with sugar to create a flavorful, concentrated sweetener. Here’s how you can make it:
- Ingredients:
- 2 cups water
- 2 black tea bags (or 2 teaspoons of loose black tea, like Assam or Darjeeling)
- 3/4 cup granulated sugar (adjust to taste for sweetness)
- 1 cinnamon stick
- 6-8 whole cardamom pods, lightly crushed
- 4-6 whole cloves
- 1-inch piece of fresh ginger, sliced
- 1/2 teaspoon black peppercorns
- 1 star anise
- 1/4 teaspoon ground nutmeg
- Instructions:
- In a small saucepan, add the water, cinnamon stick, cardamom pods, cloves, ginger, black peppercorns, and star anise. Bring the mixture to a boil over medium-high heat;
- Once boiling, reduce the heat to low and let the mixture simmer for 5–7 minutes. This allows the spices to release their flavors into the water;
- Add the black tea bags or loose tea to the saucepan. Simmer for an additional 2–3 minutes, ensuring the tea infuses fully. Be careful not to over steep, as it can become bitter;
- Remove the saucepan from the heat and strain the liquid through a fine-mesh sieve or cheesecloth to remove the tea leaves and spices. Discard the solids;
- Return the strained liquid to the saucepan and add the sugar. Stir over low heat until the sugar dissolves completely. Taste and adjust sweetness if needed;
- Allow the chai syrup to cool to room temperature, then transfer it to an airtight container or bottle. Store it in the refrigerator for up to 2 weeks.
How do I make the chai cocktail?
To create the perfect chai cocktail, start by combining the dark rum, chai simple syrup, and freshly squeezed lime juice in a container or cocktail shaker. Stir the mixture thoroughly to blend the flavors, ensuring a harmonious base for your cocktail. This step sets the stage for the balance of bold rum, aromatic spices, and refreshing citrus.
Next, slowly incorporate the rum, syrup, and lime mixture into the whole milk. Stir gently and allow the combined mixture to rest for a few minutes. During this time, the milk will begin to curdle and separate, a natural process crucial for the cocktail’s clarification. While this may seem unusual, the separation is key to achieving the drink’s elegant, clear appearance.
Once the mixture has rested, pour it into a coffee filter placed over a container to begin the filtration process. It is essential not to remove the curds, as they play an important role in clarifying the liquid. When the liquid flow through the filter begins to slow, carefully transfer the curd-filled coffee filter to a clean container. Take the liquid from the first filtration and pour it back over the top of the filter, repeating the process. Continue adding the mixture back into the filter and topping it up as necessary. This step can take time, but it is essential for achieving a perfectly clarified cocktail.
After the filtration is complete, the clarified chai cocktail is ready to be served. Pour it over ice, preferably a single large ice cube in a glass to keep it chilled while preserving its clarity. For the finishing touch, garnish the drink with a whole star anise, adding an aromatic flourish that complements the cocktail’s spiced profile. The result is a stunningly clear and beautifully balanced chai cocktail that’s as impressive in presentation as it is in flavor.
Delicious Spiked Chai Cocktail
Ingredients
- 500 ml Dark Rum
- 225 ml Chai Syrup
- 225 ml Lime Juice
- 225 ml Whole Milk
Instructions
- Add your Rum, Chai syrup and lime juice into a container and stir to combine.
- Stir the mix into the milk, and let the mix rest for a few minutes, until it starts to separate.
- Filter the mix through a coffee filter, but do not remove the curds, as they help with clarification. When you notice the rate of liquid slowing down, transfer the curd-filled coffee filter over to a clean container. Add the contents from the first pass back to the top of the filter and top it up until it’s completely passed through (this can take quite a long time).
- Serve your clear cocktail over a single large ice cube and garnish with a whole star anise.

I found the process of clarifying the chai cocktail quite interesting, and surprised at how the milk just disappears through the sieving. Could be easily a science experiment with the kids this Christmas Day – and a treat for mum and dad at the end too!
