Time to get ready for this summer, the one that has been making us wait so long. Cristina and I have almost given up on the hope of summer, but as I type this, sitting at my desk, the sun is shining and the birds chirping are about to cover my first watch of all the Grey’s Anatomy seasons on Disney +. While I type, I also wish I had a glass of this delicious lavender mocktail on hand.
This easy lavender mocktail is super quick to make as long as you have some of the lavender syrup on hand. And you can definitely make a double batch – even a triple one! – of it as it lives happily in a jar for the next use.
The flavours of this lavender mocktail are subtle and sweet, something so refreshing and calming. You will need three ingredients to make the lavender syrup to use for the lavender mocktail:

This lemonade mocktail has barely any prep time other than the lavender syrup. Which, if you make ahead means there is no prep time needed to get to taste this beautiful lavender mocktail.
All you have to do to get this lavender mocktail is combine the water, lemon juice and lavender syrup in a large jug. You can adjust the simple syrup to your taste, of course. Then you will fill two glasses with ice, a couple of slices of lemon and you will fill them. Garnish with some extra lavender and a lemon peel swirl and you’re ready to serve!

Equipment
- 1500ml Water Jug with Removable Lid
- Culinary Lavender
- Elegant Tumblers
- Ice Cube Tray
- Saucepan
- Strainer
Ingredients
For the lavender syrup
- 1 cup water
- 1 cup sugar
- 3 tbsp dried lavender
For the mocktail
- lavender syrup to taste
- 1 cup freshly squeezed lemon juice
- 1 cup cold water
- ice
- lemon slices and lemon peel swirl to garnish
- fresh lavender or dried lavender buds to garnish
Instructions
- Prepare the lavender syrup by placing all ingredients in a pot and combining over medium heat until all the sugar has dissolved.
- Let the syrup simmer for 30 minutes.
- Remove from the heat and let is sit to cool for 30 minutes before straining using a fine mesh strainer.
- Decant in a jar with a lid and let it come to room temperature.
- To mix your mocktail, add the water, freshly squeezed lemon juice and lavender syrup to a jug.
- Fill two glasses with ice and a couple of slices of lemon, then fill them with the mocktail mix.
- Garnish with some extra lavender and a lemon peel swirl and you’re ready to serve!
