When we try and develop a recipe, we usually follow quite strict rules to make sure the end product is what we like. And sometimes it’s a lot more difficult if you cannot think of what will make the recipe better, but that is not the case with these no bake edible cookie dough balls. Oh no, these bites were right on the first try, and we couldn’t be more surprised to be fair.

We are addicted to cookie dough. And cookies, too. But there is something about that raw cookie dough recipe that just makes my brain go mush, and I cannot stop eating it. Of course, if you’re looking for a quick and easy way to satisfy your sweet tooth, then look no further than these no bake edible cookie dough bites. These little treats perfectly combine creamy, sweet cookie dough and crunchy milk chocolate chips.

And because they require no baking skills whatsoever – just mix, roll, and enjoy – they will easily become a strong favourite of everyone in your household, just like in mine. With just a few ingredients, you can whip up a batch of these tasty treats in no time, and to be completely fair, you don’t even have to wait for them to chill. If this is not a deal breaker, then I don’t know what is.

Some people also like to cover these in chocolate, whether that’s milk, dark or white chocolate alike. And I am sure this gives an extra layer of deliciousness, but I like cookie dough as I like chocolate chip cookies: simple. No extra stuff on my cookie, oh no! Plain chocolate, especially happy if it’s one from Ben’s Cookies – or even these ones we made previously! So edible chocolate chip cookie dough it’s the deal for me – but I’ll give you tips and ideas on what to add to yours should you wish for something different.

No Bake Edible Cookie Dough Bites

I am sure you’ve seen plenty of recipes like this one for the no bake edible cookie dough bites. And who I am not to offer you yet another one? There is a secret to this one and I swear, having tried plenty of raw cookie dough before, it changes everything in the game. But one little secret at a time. First off, though, a bit of science behind the ingredients in these cookie dough bites.

What ingredients are in these edible cookie dough bites?

The edible cookie dough bites don’t require many ingredients as such, and will actually be as easy as it gets when it comes to whipping them up together. But to confirm, you will need flour, which is my little secret here.

You’ll be asking – what’s so secretive about flour? Well, nothing as you might think, but having read around about toasting flour, I had to try it myself. And let me tell you, it was possibly the revelation of the year: it gives the cookie dough such a delicate added bonus taste you don’t want to miss out on. Yes, you do not have to toast your flour, but if you were to do it… It would change your life completely!

Next up you will need butter, unsalted of course. If you only have salted then avoid the extra salt. You will also need both brown sugar and white sugar. Last, but definitely not least, a hint of vanilla thanks to the vanilla extract, salt and regular chocolate chips. All ingredients are pretty much available in your pantry and fridge, so what’s your excuse for not making them now?

What’s the difference between a baked cookie and raw cookie dough?

Who in this room has prepared cookie dough to bake and not had a good chunk of unbaked cookie dough before baking it? Yet, not the safest option there with raw eggs in the dough pre-baking. I know, we all know it, what can we do? So that’s when raw cookie dough that is safe to eat comes to the party.

Raw eggs are an issue because of salmonella, especially if unpasteurised. And even though eggs can be sold as pasteurized, meaning they’re heated just enough so bacteria is killed off, you still shouldn’t crack open an egg and start chowing down (Source: Cleveland Clinic).

Can you consume raw cookie dough safely?

What is missing from the cookie dough you can consume raw is, you guessed it, the eggs. And by removing these, you will be able to happily consume the cookie dough and fill it with everything you might like.

There are plenty of shops around that sell cookie dough by the scoop, and some of the flavours you will be able to find are outrageously delicious:

But because I am also very nice, if you are ever in London you must try out some of these shops for sure:

  • Blondies Kitchen – Meet the UK’s first milk & cookie bar! You can find this one scattered around the city, including inside Selfridges Food Hall.
  • Naked Dough – This is definitely my favourite one among these, because their cookie dough is second to none (of the ones I tried!), their Kinder Bueno Cookie Dough it’s a must-try.
  • MyCookieDough – this one you’ll be able to find in Westfield White City.
  • The After School Cookie Club (formerly known as Humble Dough) – a rebranded, new found love for all things ice cream, cookies and cookie dough, yum.
  • Chin Chin Club – Their nitro ice cream is just too good for words, but I have yet to try the cookie dough, and people seem to rave about it.
  • Crosstown Doughnuts – I love their doghnuts, not so much the cookies, but I have not tried their cookie dough yet so of course it goes on my list.
  • The Urban Chocolatier – This one had raving reviews of the cookie dough they serve, even if they are chocolatiers first and foremost.

Can you bake the cookie dough if you have extra?

Of course, you can! You will need to add an egg to this specific recipe to be able to bake the cookies. Just make sure you combine the egg properly and then spread on a baking sheet and in the oven they go at 180°C for 8-10 minutes or until golden on the edges. Easy peasy – and you don’t even need to toast the flour before doing this! Brilliant, am I right or what?

It makes some brilliant cookies, especially when it comes to that late night craving you’ll be having while watching a movie (I know I do get that crave often, almost every evening).

How do you make these no bake edible cookie dough bites?

First off, you will need to toast the all purpose flour in the pan for 5 minutes, or until it starts to get golden and smells toasty, almost bready. It’s when it gets perfect for this recipe, it gives a fragrant addition to the cookie bites. Let the flour cool down to room temperature and set it aside.

In the bowl of your stand mixer, add the butter, brown sugar and granulated sugar. Beat until they are light and fluffy. You can also do this by hand, but having one around makes my baking so much easier and effortless – why not use it!? It’s time to add both the vanilla and salt and combine, then add the toasted flour and let it mix in briefly as long as it’s fully incorporated. You don’t want to over-mix this and get it tough, almost unedible. And that is definitely something we want to avoid!

At last, it’s time for the mini chocolate chips! Add them to the bowl and fold them in by hand. If you do so by mixer, you’ll risk breaking up all the chocolate chips. Or whatever addition you have decided to make to this cookie dough. We have gone traditional with the chocolate chips, but anything could work.

Last, but most definitely not least, you will need to roll the cookie dough into 2.5cm balls and refrigerate them for 15-20 minutes. You can now serve them – or stuff your face with them, the choice is yours. We definitely had to wait to take pictures, but know that the strength it took was unimaginable.

Can you replace or add anything in this recipe?

As I mentioned, these no bake edible cookie dough balls are so versatile and you can most definitely use different ingredients. To start, with the flour: now I have used plain white flour and toasted it using a pan on the hob. If you were to use wholemeal flour, it might be a little difficult to toast it and not burn it. You can simply avoid toasting it if you don’t feel comfortable with it. You can also use almond flour, gluten free flour or oat flour.

Then the butter: you can use salted or unsalted, just make sure you avoid adding extra salt if you are to use salted butter. And maybe, if available to you and you fancy taking a little risk, why not trying a different kind of butter altogether? From goat to buffalo, and even flavoured butter – we love a good maple-flavoured butter around here! – it will give this recipe a whole different edge.

Chocolate chips, of course it’s what tradition calls for. But who am I to stop you from living your cookie dough dreams?! Think Nutella, rainbow sprinkles, honeycomb, toffee, caramel and even raisins, if you are #teamraisins. Maybe you are a white chocolate kinda person, or even a dark chocolate person.

And what about flavoured chips like the peanut butter ones or the chocolate and mint ones? It’s honestly such a great recipe, as versatile as it can get, and you only need to try all the options and find your absolute favourite one. I promise you, it will all be worth it for these no bake edible cookie dough bites.

But also, how about covering them in chocolate? Dark, white or milk alike, melt your chocolate and dip each little bundle of joy, then let the chocolate set and enjoy this extra luxurious form of no bake edible cookie dough bites. Maybe even add some nuts or sprinkles on top, to make it even more fancy, because who doesn’t like fancy food? I told you, there is one for every type of person.

Can you make it vegan?

Because the only two ingredients you need to replace are the butter and the chocolate chips, I say yes you can indeed! Replacing the butter might be the most difficult one here as you need to find one you like and that works similarly to dairy butter. Because you will not be melting it, you need to use something different than a spread. There are plenty of options available on the market right now like Flora and Naturlì which are honestly so good, you won’t even see the difference.

And of course the same goes for the chocolate chips. You can either go full-on dark or even try the plenty of options available for vegan milk chocolate. And if all else fails with the actual chocolate chips, don’t forget that using your favourite chocolate bar chopped up works wonders. And this goes for our non-vegan friends too, clearly.

How can you serve the chocolate chip cookie dough balls no bake?

These no-bake cookie dough bites without cream cheese are so versatile! I am happy to confirm these eggless cookie dough bites go down extremely well on their own, but sometimes if you feel like you need more, they make the perfect addition to:

  1. Ice Cream: Mix the edible cookie dough bites into your favorite ice cream flavor to add texture and flavour. Does anyone love Ben & Jerry’s cookie dough ice cream? Now you can make it at home and thank us later!
  2. In Yogurt Parfaits: Layer the cookie dough bites with yogurt and fruit to create a delicious and indulgent parfait.
  3. In Trail Mix: Add the edible cookie dough bites to a homemade trail mix along with nuts, dried fruits, and other goodies for a sweet and satisfying snack on the go. In this case roll them a bit smaller and they will be the perfect pick me up on a hike.
  4. As Toppings or filling: Use them as toppings for cakes, cupcakes, or ice cream sundaes to add a fun and flavorful twist. Imagine even using them as filling-in cupcakes ( a nice surprise indeed!).
