Easy No-Bake Apricot Slice – Delicious Dessert Or Snack

This apricot slice recipe is sweet, chewy, and so delicious. There is nothing better than a no-bake dessert or snack recipe, and one you can make in big batches is even better!

Around here, we love to have apricots and actually have a tree behind our house and have made apricot jam plenty of times! So what better way to use this fruit than making a no-bake treat for the arrival of summer?

What is an apricot slice?

An apricot coconut slice is a delicious no bake treat that is full of summer flavor. Sweet and slightly tart, these fruits are the main character of a perfectly balanced treat that is not too sweet and perfect for homemade lunchboxes or as an after-dinner treat.

Soft, chewy and perfect to make everyone happy, from adults to kids alike. And should I say again, there’s no oven involved?

What are apricots? Are they good for you?

Apricots are stone fruits (like peaches, plums, nectarines, mangoes, to mention a few), botanically known as Prunus Armeniaca. Origins are a bit murky, but it seems that they trace back to Central Asia. Nowadays, they are cultivated all around the world.

These fruits are well known for their yellow-orange skin and are said to be a cross between a peach and plum in terms of flavour, sweet and tart. Not only do they pack big flavour and nutrition in such small shapes. But they are also packed with vitamins and minerals. Apricots benefits are:

  • very nutritious and low in calories
  • high in antioxidants, among the many, they contain most notably flavonoids. They help protect your body from oxidative stress;
  • excellent source of beta carotene; vitamin C and E, which can help protect against eye damage as well as boost skin health;
  • source of soluble fibre, which may help with gut health;
  • high in potassium, which may help prevent high blood pressure and reduce your risk of stroke;

What ingredients do I need for this apricot slice?

To make this no bake treat you will need:

  • plain sweet biscuits: we used a mix of Lotus and plain vanilla biscuits as we had some leftovers, but you can use anything you like that is plain enough to get the apricot flavour to shine;
  • dried apricots: the main ingredient in this recipe, and what will help give this treat its soft, chewy texture and rich flavor;
  • sweetened condensed milk: this will be the binder for the ingredients as well as giving sweetness to your no-bake treat;
  • desiccated coconut: helps bind the ingredients together and gives the slice a structure;
  • salted butter: used to hold together the fruit part and the dry ingredients;
  • vanilla extract: balances the fruit’s tartness while adding a hint of sweetness and warmth.

How do I make this easy apricot slice?

You will start by preparing the biscuits. In a food processor, blend them until they form fine crumbs. Then add the dried apricots and dessicated coconut and blend until well combined.

In the meantime, in a small saucepan, gently melt the butter with the sweetened condensed milk and vanilla until smooth. Pour the butter mixture into the food processor and pulse until everything comes together.

Prepare your 20 x 30 cm tray with parchment paper (you can also use a smaller one, they will be just taller and take a bit longer to set). Press the base mixture firmly into it and sprinkle the extra desiccated coconut on top. Chill in the fridge until set (it should take around 2 hours). (You can also add an icing on top instead of coconut).

Slice and serve your apricot slice on its own or alongside a cup of tea or a dollop of vanilla ice cream, enjoy!

Can I freeze this apricot slice?

You absolutely can! You can store this coconut and apricot slice in the freezer for up to three months and thaw it overnight in the fridge before eating it or adding it to your lunchbox. They are easy to freeze, too!

All you have to do is cut the apricot slice and use squares of parchment paper between each slice before putting them in a ziplock bag or storing them in a freezer-safe container. Otherwise, you can cut the slices and freeze them on a tray before adding them to a freezer-safe container. This no-bake apricot slices will be perfect on the go or to add to your kids’ lunchboxes too!

Ingredients
  

  • 250 g plain sweet biscuits we used a mix of Lotus and plain vanilla biscuits
  • 225 g dried apricots finely chopped
  • 200 g sweetened condensed milk
  • 85 g desiccated coconut plus 1 tablespoon extra for sprinkling
  • 150 g salted butter cubed
  • 1 teaspoon vanilla extract

Instructions
 

  • Blend the biscuits in a food processor until they form fine crumbs.
  • Add the dried apricots and desiccated coconut, then blend again until well combined.
  • In a small saucepan, gently melt the butter with the condensed milk and vanilla until smooth.
  • Pour the mixture into the food processor and pulse until everything comes together.
  • Press the mixture firmly into a lined tray (20×30 cm), sprinkle with extra coconut, and chill in the fridge until set.
  • Slice and serve your apricot slice!
